Fish recipes - inspire me please!

I'm trying to cut down the amount of meat we eat and use more fish, but am lacking inspiration. Any ideas for easy, economical, or otherwise fish recipes, gratefully received!

My supper-in-sixty-seconds recipe is a v nice fish and creme fraiche thingy.

It's super easy - you get any white fish (I usually use haddock) and put it in individual microwave-proof dishes with two or three large tablespoons of creme fraiche per person.

Then I add some flavourings - sometimes I do a kind of pesto version with torn up basil leaves and grated parmesan, sometimes I do a sort of cheese sauce with grated cheddar and a tsp of English mustard. Otherwise chopped up sundried tomatoes are nice, or a tsp of creamed horseradish. You can be creative basically!

Then cover with clingfilm and microwave on medium for about 3 mins (do each portion separately, or up the times if you cook them all at the same time).

Remove the clingfilm, check the fish is cooked and stir the sauce (it might separate slightly but don't worry, you can stir it back together).

Serve with boiled potatoes and broccoli.

Takes about 10 minutes and is v nice.

2 White fish fillets, any you fancy
1 tin of chopped tomatoes
1 tbsp tomato purée
Dash of Worcestershire Sauce
Pinch of sugar
A bit of water to loosen it up a bit
1/2 tsp of chilli powder
1/4 tsp of paprika
Handfull of frozen/fresh red & yellow peppers
Handfull of frozen/fresh/tinned sweetcorn

Simmer for a bit, break up the fish into chunks as it cooks, serve with steamed new potatoes and some veg - jobs a good'un Grin

I made this a few months ago, purely experimental as I too wanted to eat more fish but find it can be bland, and it's bloody gorgeous! Got a nice kick to it. Obviously you can add more quantities depending on how many are eating, it's very much one of those ' can't go much wrong ' recipes!

Salmon marinated in soy, ginger, honey then grilled, with stir fry veg and noodles or boiled rice.

Salmon, cooked leeks, spoon creme fraiche wrapped in puff pastry and baked with new potatoes and broccoli.

4 white fish fillets, wrapped in prosciutto or any kind of thin sliced ham / bacon, couple tbsp pesto and tub of creme fraiche dabbed all over and around fish, grated parmesan sprinkled over. Bake 200 degrees for 15-20 mins adding 1 tbsp pine nuts half way through. Stir sauce before serving with fresh pasta or rice, with salad or green beans. (From Good Food mag and very delicious!)

My DH's favourite dinner is one I got from a recipe book for teenagers called Clueless in the Kitchen. It's a fantastic book, and Fish a la Foil is so tasty & easy:

A salmon fillet for each person
lemon juice
butter
parsley
grated carrot
sliced onion
grated cheese

Square of foil for each fillet. Mix the butter, lemon juice and parsley and brush onto the foil in the middle. Put the fillet on top, and top with a handful of carrot, onion and cheese. Wrap up tightly and bake in the oven for 20ish minutes at 200C. Serve with rice and sweetcorn.

Will post fish in a bag (this is DH's so will need to double check with him) tonight when I'm at home.

Smoked salmon salad is my own so:

Mix together horseradish sauce with a little mayo, thin with olive oil (needs asome vigorous whisking).

Pan fry until brownish the hot smoked salmon.

Add to a salad of lambs lettuce, red onion, sliced apple (I like something like a pink lady).

Pour on sauce.

Spanish Fish:

Olive oil for cooking
1 large red onion peeled and cut into small chunks
4 garlic cloves, finely chopped
3 small chorizo sausages, peeled & cut into chunks
1/3 bottle of Oloroso sherry
500g vine-ripened cherry or pomodorino tomatoes, quartered
225g butter beans, rinsed
Sea salt & freshly ground black pepper
4 x 150g thick white fish fillets
Few knobs butter
Handful basil leaves

  1. Heat 3-4 tblsp olive oil in a large saucepan. Sweat the red onion in the oil with the garlic and chorizo for 6-7 mins, or until the onion is soft & the chorizo has released some of its oil into the pan.
  1. Pour in the sherry and bring to the boil while scraping the bottom of the pan with a wooden spoon. Cook until almost competely reduced, then tip in the tomatoes & butter beans. Check for seasoning then simmer for 5-6 mins until the toms have just softened.
  1. If you have a griddle, get griddle on a low heat, at least half an hour before you start cooking. If not heat 1-2 tblsp oilive oil in a large non-stick frying pan. Rinse and pat the fish dry with kitchen paper. Season all over then either add the fish to the griddle or lower into the olive oil.
  1. Either griddle, or fry, the fish over a moderate heat for 4 mins, then slip the butter into the pan. Cook for another min, spooning over the foaming butter. Flip each fillet over to finish cooking on the other side for 30 secs to 1 min, until just cooked. Remove the fish from the pan.
  1. Tear the basil leaves over th tom mix, then divide between warmed serving plates or wide bowls. Balance a fillet on top, drizzle with a little extra virgin olive oil and sprinkle with black pepper. Serve immediately

California Grilled Fish:

Make a mix of breadcrumbs, paprika and cheese (I use a cheddar).

Mix chopped cornichons, coriander, lime juice and garlic into some mayo.

Spread mayo onto think white fish fillets. Sprinkle breadcrumb mix on top.

Grill under a medium heat until fish cooked.

My favorite and the easiest fish recipe that I have done so far is the following:
I take my rice cooker and add some rice into it. On the top of the rice cooker in the separate layer I add fish that I have selected for the meal and let everything cook/steam together. Once the rice is cooked, the fish is cooked as well. I don't use any seasoning while steaming the fish as I take some of the fish for my baby who loves his meal very much. However, I season the fish with some fresh lemon juice and sea salt and pepper afterwards.

This way you don't use any oil whatsoever and you preserve all taste as it is.

Salmon is lovely curried. Doesn't matter if you use sauce, paste or make your own from scratch.

A fairly quick one is to bake fish fillet in the oven - I find it stops loads of liquid coming out later. Put in dish and cover with creme fraiche with grated cheese stirred in. you can cover with wholemeal breadcrumbs and slice tomato. Bake for 10-15 mins until browned and crisp.

Also, cooked salmon, flaked and stirred into pasta, or boiled rice with added peas and cooked sliced mushrooms.
