Totally broke,but a bag of dried chickpeas in the cupboard...what can I make?

Have rice, potatoes and quinoa to cover the carbs. Just been to Lidl and stocked up on fruit and veg that was cheap- I have carrots, cherry tomatoes, avocadoes and sweet potatoes.

I also 'splashed out' on some fresh coriander, figuring it was worth 70p since it will make even the plainest meal delicious!

So, can anyone fill me with inspired ideas to cook the chickpeas? I soaked them last night, just simmering them now. Planning some sort of burger tonight (using the coriander, poss grated carrots, and some spring onions). But I really need to use them for the next 3 evenings meals and I have not a penny to spend til then.

ANY suggestions very much appreciated! thanks

These falafel are quite tasty. It's a slimming world recipes, but uses mostly store cupboard ingredients.

Riven - good thinking! I used to make chickpea curry all the time, will add the sweet potato too

I have 4 onions, 3spring onions, lemon juice, jar of fresh ginger, tiny bit of red pesto, half a pack of feta, few sundried tomatoes and a tin of tuna.

Oh, and peanut butter which I'm planning to put in the burgers! That is pretty much the contents of my kitchen, summer holidays have cleared me out!

yes, have you got a hand blender?

I've just made some houmous- added some garilc cloves, lemon juice, and tahini (you can buy this in most supermarkets, it's just sesame seed paste).

Next I'm planning to make some burgers. I don't follow a recipe as such. Basically mash chickpeas (I cheat and use hand blender), add other bits and pieces- a good combination is grated carrot and peanut butter. I'm also going to add some chopped spring onions, and some coriander just because I'm a bit obsessed with it!

The other thing I make is a curry, fry onions, sweet potatoes/butternut squash, and any other veg. Add water and stock and curry powder or paste. loads of garlic too, and again coriander is great Grin . You can add red lentils too to pad it out, and if the kids aren't eating with us I add spinach I normally have frozen spinach for emergencies, so it's normally this)

Loads of other ideas people suggested above too. Try PrettyFeckinVacant's 2nd link, planning to make lots from there!

Oooh I like houmous. I was thinking I'd just add it to sauces..without them knowing.

nice salad with them and your feta avocado and cherry toms? Even without tahini they make a tasty dip. If you've got some flour you could make some flatbreads to wrap your falafals up.

I am a coward and have never actually cooked my own chick peas. However, since they were only 50p a bag in the supermarket and since we eat tonnes of the little canned devils, I think I need to bite the bullet and learn how to do it.

So - I soak them for how long? And then how do I cook them?

The chickpea curry that Riven linked to looks fab. I also like chickpeas in a tagine with cous cous.

Oooh - tin of tuna, chopped tomatoes, chickpeas plus a bit or garlic/chilli/harissa/ and serve with couscous or pasta or potato. The pesto would probably work instead of harissa.
