Flapjack help!

i made them for the first time today but when it came out of the oven it was a big soggy mess - didn't feel like it had set much at all (and i'd followed the recipe word for word!).

i'd cooked it in a silicone case (perhaps this was the problem?) so transferred to a metal tin and shoved it back in the oven for another 10 mins.

left it for a good 30 mins and it seemed to have set but still broke down a bit in places when i cut it into pieces.

Does anyone have a tip on where i went wrong and how i can go right next time?

TBH sounds fairly typical flapjack! They often don't stick together brilliantly.

The best ways to get it to stick together more IME are:

  • make sure you use enough ( even a little extra ) of the bad stuff that sticks it together - sugar/syrup/butter
  • cook it for long enough
  • before baking, press it down very firmly in the tin

I am going to attempt apple flapjacks tomorrow with my apple glut. I suspect they may fall apart and we will end up eating them as granola. In fact, that sounds quite good. Grin

IME you just need to find a recipe that works and set the oven a bit lower than it says in the recipe.

When I worked in a childrens home I once made some flapjack with a couple of the young people and it was so solid we had to bin the tin complete with flapjack still welded to it. We laughed so much, it was a great bonding experience so all was not lost Smile

you have to let it cool down before prodding it mine seems soggy at first

think my problem was not pressing it down firmly in the silicone case as the case wasn't big enough for all the mixture so threatened to spill over.
will stick to a metal tin in future!

My flapjack tips....

Don't melt the sugar with syrup and butter if you do the flapjack will break your teeth.

Use cheap milled oats (def. not jumbo ones), I even shove a bit of Readybrek in, somehow this makes it more flapcake.

And yes press down, wait to cool etc

'scuse my ignorance Frog but do i melt the sugar separately or just add it "hard" to the rest of the ingredients?
Am using Sainsburys TTD Porridge Oats as have been dying to get rid of them!!

I always make my flapjacks in the microwave. Never had a problem yet!

I read somewhere that soggy flapjacks are due to too much syrup, but have yet to put this to the test.

deemented loving the idea of microwave flapjacks - are you able to link to the recipe pls|?

pantloons : this recipe called for honey rather than syrup - i "guessed" the 3 tbsp of honey required so perhaps over did it?!

Here you go...

100g (4 oz) butter

25g (1 oz) caster sugar

5 tablespoons golden syrup

200g (7 oz) oats

150g (5 oz) milk chocolate

Preparation method

  1. In a large non-metallic bowl, melt the butter and sugar together in the microwave. Stir in the syrup using a hot spoon (to prevent sticking). Stir in the oats. Microwave on high for about 3 minutes (depending on the power).
  1. Spread mixture on the bottom of a lightly greased baking dish. Break the chocolate into pieces and melt in the microwave, keeping a close eye that it doesn't burn. Spread chocolate on top of oat mixture and leave to cool in the refrigerator until set. Cut into squares.

It's simple Smile I sometimes add either apple and cinnamon or cherry and coconut in with it. Delish.
