What can I do with leftover duck?

Tesco have duck half price this week so am thinking of getting one next week.

Usually buy a chicken and have a curry with the leftovers the following day.

I'll only get the duck if I can do something with it the following day (ie get two meals out of it)

So what could I do?

Would it be too dry to shred and use in pancakes like you get from the chinese?

You don't get anywhere near as much meat on a duck as you do on a chicken so there aren't often many leftovers. Whatever scraps we do get I like to stirfry with some nice veg and soy sauce or plum/hoi-sin etc.

Do you roast a duck and make the gavy the same way as a chicken?

I roast it on a rack (I use the rack from the grill pan balanced over a roasting tin) because they are so fatty you don't want it sat in the fat! I don't think I have ever made proper gravy with a duck - might be too fatty. I do save the fat in the fridge and use it to roast potatoes next time.

We have roast duck every christmas, after carving remove all the meat, shred and as our boxing day ritual, I spread the meat out on a roasting tray and then re-roast till crispy. Then get some fajitas, cucumber, spring onion, hoisin sauce and we have quick duck pancakes for dinner on boxing day :o
