It is September so I can now think about Autumn clothes and Autumnal food without being boo-ed down with talk of summer! My opaques are ready and waiting and so are my boots.

SO - what lovely veggie Autumn main courses can I be thinking of?

So far I have -

veggie sausages, mash and savoy cabbage;
veggie sausage casserole;
macaroni cheese;
veggie goulash and baked potatoes.

Any more ideas for lovely warming things that aren't too much faff to cook after work?

oooh this is making me hungry! I love Spinach & Mushroom lasagne, always tastes so delicious. And I make a very tasty Tomato & Lentil soup which also has "baby" pasta shapes - bit of bread to dunk in and it's a proper winter warmer! (Tomato & Lentil soup - basically, tomato soup using tinned or fresh tomatoes, pre-boiled red lentils (boil for about 10 mins then drain & add), stock & mixed herbs and then blend, add pasta, boil for 10 mins and hey presto!)

We do rissotos with pearl barley instead of rice. Delicious, cheeper, better for you. Technically it's an orsotto or sumfink. Smile

BG, to be honest when I make lentil loaf all I do is make extra lentils and rice mix then the next night, I mix in some chopped/grated veg, a tin of tomatoes, some herbs and spices and a handful of breadcrumbs. Then I press it into a loaf tin and bake it. It's not very exciting.

The tofu finger sandwiches are easy. Cut a block of tofu into fingers, a block gives me 10 fingers, I think. Then dip in flour, egg and breadcrumbs, or, if you are vegan, brush them with oil and roll in breadcrumbs. Then either bake or fry them until they are crisp. MAke them into sandwiches with salad and mayo or with tomato sauce or whatever, a la fish finger sandwiches. My kids love these as a quick lunch or a main meal with wedges and salad leaves.

Potato and Green Lentil Bake.

Potatoes
rice
Green lentils
onion
cheese sauce.

par boil and slice potatoes

mix together cooked rice, tinned (or fresh cooked) green lentils, and a gently fried onion.

Layer sliced potatoes and lentil/rice mixture

Pour over a jug of cheese sauce, letting it run down through the layer, top with a little grated cheese and cook until potatoes are cooked, and top is brown.

(Quantities are not precise, you want the lentils and rice to be approx. 50/50, might take 2 cans of lentils depending how many you cook for)

It's very tasty.Smile

Really vulgar? I don't know why greggs in england don't sell them...may have to try one when I'm next up there! Smile Once saw a chip shop claim to be "home of the couscous toasty" i can't believe anyone has copied them and so they have to assert their status as originators of the delicacy!

This is adapted from Nigella double potato bake (I think that's what it's called?) - not really a recipe but so easy and so comforty:

Peel & chop sweet potatoes, normal potatoes (I like Charlotte), red onions (into wedges) red & yellow peppers, sometimes add carrots too, loads of garlic cloves (separated but not peeled).

Season with maldon salt & lots of pepper, toss in olive oil and roast at about 180 for about 40 - 50 mins (add the garlic after 10 mins).

The slice halloumi v thinly over the top and put back in oven on full whack.

I add a finely chopped red chilli over the top too.

Yum yum yum, we are definitely having that this week - much nicer than it sounds.

Oh yes, macaroni cheese pies are fab, especially with brown sauce Blush

My older boys love a roll with a scotch pie in it. It's a common thing in our neck of the woods.

A Mediterranean Sweet Potato Cottage pie type affair.

Roast and mash Sweet Potato-with black pepper and Butter/Philadelphia

Stir fry onions, garlic, courgette, peppers etc (whatever you have) and layer the veggies then the mash, top with grated strong Cheddar and bake in the oven for a little while.

Sometimes I put the veg in a tomato sauce or add feta to the veg instead of cheese on the top.

Oh yes, I second (or was it third?) the roast butternut squash risotto. I make mine with sage, garlic, White wine and Parmesan - and add a scattering of toasted pine nuts.

I also like a sort of casserole of chickpeas, whole blanched almonds, butternut squash and yellow pepper. It's much much nicer than my rather vague description!

Stressedhemum, i saw the pie sanger in edinburgh the first week i moved up. My poor yorkshire eyes had never before whitnessed anything like it!

Maybe i'll have a go at making a macaroni pie. We have quite a fondness for homemade versions of slightly wrong foods. You know the things that have the kernel of a good idea but are poorly exactued in take away places etc. (not wishing to slight the greggs mac chz pie, it may be a thing of wonder!) we do our own jalapeno poppers, breaded mozzerella, cheese and onion pasties etc... Yum yum! Blush Grin

The Greggs one is nice, MFM, but we have a local bakery that makes absolutely fabulous ones. I don't really like Greggs (oh no! the heresy of it all) I think that their pastry is very greasy. If you want to make one yourself, you have to make that special scotch pie hot water pastry.

Is it only in Scotland that folk eat pie rolls, then? Perhaps that's one of the reasons for our great public health record then, eh? You cannae beat a homemade cheese and onion pastie, though, except perhaps with the bean and cheese ones that I make.

We love those giant yorkshire puds. Put a layer of baked beans in the bottom, add cooked chopped sausage (veggie, or not), top with mashed potato and cheese and bake until golden and melty.

know what you mean about greggs. When i was pg i was working near the greggs factory and the smell of donuts and sausage rolls made me feel very sick... Envy that's me being sick...

Love the idea of a Med-style cottage pie though.

Ginat Yorkshires are a fab suggestion - I hate baked beans though!

Has anybody got an idiot-proof Yorkies recipe? Despite growing up almost in Yorkshire (Derbyshire) I just can't get them right.

Don't really have a recipie, am far too yorkshire for that Wink just mix eggs flour and milk as per pancakes. But super hot oil in a super hot oven is the key i think. Smile
