DP arrived home with 36 eggs!

What would you do with 36 eggs? I'm thinking omlettes for lunch tomorrow, we're having roast for dinner, then egg on toast for breakfast during the week and giving away as many as possible! Any other inspiring egg ideas? Grin

He's doing some building at a farm and they haven't sold as many as they thought over the summer, they're about a week old.

you can keep them fresh by oiling them (to prevent oxygen getting in

then keep in cool storage
they will last for over a month

we used to do that back in 70's with any sulprus of eggs we used to have

Jamie Oliver's fish pie has hard boiled eggs in it. It's lovely.

You can freeze eggs, but not the shell. Break them into a big ice cube tray and defrost properly before you use them.

I sometimes put bits of left over veg, broccoli, carrot, tomato, courgette etc and some ham, sweetcorn, whatever in little pots, break an egg on top or two beaten eggs on top and cook. Maybe with a bit of cheese too Kids love it.

Some old fashioned baking. Some cakes, banana bread etc can then be frozen. I do love an egg.

make lots of tarts, bacon tart, tart au citron etc etc. savoury ones freeze well.

yorkshire puddings with your roast dinner.

meringues with left over whites.

cakes, muffins

i could use those eggs in a flash!

Yep, get baking - cakes, brownies and the like freeze really well and then you can enjoy them for months to come. If they're only a week old they'll be much fresher than supermarket eggs anyway and so anything you make will be superb.

Pancakes for breakfast when you're fed up with boiled eggs, omelettes, frittata, quiches (they freeze well too), proper custard, meringues, egg mayo for sandwiches .... ooooh, I love eggs :)

Ice cream. I've just used twelve yolks to make vanilla. Have put the whites in the freezer to make pavlova another day.

Hard boil some for egg mayo sandwiches. Or just have some hard boiled eggs in the fridge as snacks.

Oooh custard, I've never made custard well only with powder Blush but we have blackberry and apple pie for tomorrow.

Egg and Bacon pie - line a tray with puff pastry, beat loads of eggs together and add chopped bacon and bake until it's golden on top. Great hot or cold!

creme patiserie (spelling is shocking in English let alone French) and then freeze it in handy tart filling sized portions
