Use chorizo sausages within 2 days of opening- really?

It is cooking chorizo. Surely that means it is cured and therefore will last for ages? Are Tesco just covering their backs with this advice?

If I do have to use them within 2 days, anyone got any lovely recipes?!

Ignore it. I've kept cooking chorizo for weeks and its been fine

I think chorizo is raw...like chipolatas...I doubt you would get food poisoning if you kept it for 3 days, though.

I had a similar thing when I bought a smmoked herring marinated in oil. It said to consume within 24 hrs of opening. Smoked fish covered in oil? Really?

For recipes...I guess all the lentils or beans stews or perhaps pizza?

I've kept open chorizo in the fridge for ages - well up to a week and no problem. Think you are right about it being cured etc Think supermarkets say that about everything - from cold meat to houmous etc. Waitrose does a nice recipe with chicken thigh fillets, red onion and tomatoes with chorizo baked in the oven - look it up on their website. Otherwise look up paella or jambalaya type recipe.

Chorizo is cured and will last for ages. We have it for at least 2 weeks and is fine

I have a lovely chorizo & chickpea stew recipe which is lovely served with couscous. Do you want me to dig it out?

Chorizo lasts for ages in the fridge....paella is my favourite use.

Here goes:

Chorizo casserole with chickpeas & coriander

900g Shock chorizo chopped. I usually use about 200g and is fine!
2 onions thinly sliced
2 cloves garlic, chopped
1 red chilli, seeded & finely chopped
1 red pepper (romano if poss) chopped
200ml dry white wine
400g tin tomatoes
275ml chicken stock
1 tbsp dark soy sauce
1 tbsp worcestershire sauce
1 tbsp tomato puree
2 x 400g tins chickpeas (i sometimes use 1 borlotti instead)
1 bunch coriander, chopped

Heat non-stick pan, add chorizo & heat until browned. Remove & reserve
Add onion, garlic, chilli & pepper & saute until softened
Return chorizo to pan, add wine, tomatoes, stock, soy sauce, worcester sauce & tomato puree.
Bring to boil & simmer for 20 mins
Stir in chickpeas (and/or beans) and simmer for 3-4 mins
Remove from heat & stir in coriander
Serve Smile

I keep Chorizo in the fridge for months. We had a chunk last night from one I bought at least three weeks ago. It was delicious. It's cured so fine. I suspect you could even leave it out of the fridge.

There are two types of chorizo though - one is raw, like our sausages, the other is cured and dried like salami.

I've been using it for ages and often keep it in the fridge for weeks at a time. Not been ill yet.

nice risotto with butter nut squash and choritzo and a little cumin. Chuck in some celery, onions and garlic too. Lovely!

If it's cooking chorizo it's raw and will need using fairly quickly. The cured and cooked kind will keep for yonksGrin

Cooking chorizo is raw, looks like normal sausages but red?

Have had this problem this week, what I've done is cook the spare sausages whole in the oven, as per pack instructions. Then slice and freeze. Will be ready to add to stuff next time....

Oh, I see, I think I may have the raw sausages then. Usually I buy the cured. That explains it. Will be making the stew tomorrow night then!

I quite like doing a chorizo and onion hash brown thing with cubed potatoes and an egg on top. Used cured cubed chorizo, but cooking chorizo would work equally well - probably fry first then cut up though.

One specifically for cooking chorizo is Good Food book - my DH loved it - chorizo toad in the hole using cooking chorizo instead of normal sausages. You bake the chorizo in the oven with some roughly chopped onion (red is nice) for 10min at 200C, then add the usual yorkie batter mix with some rosemary added. Bake for further 25min. Very yum!

can of kidney beans
chorizo chopped up
tinned tomatoes
chopped garlic
paprika
oregano
diced onion
any veg (mushrooms and courgette is our fave)
....makes a lovely casserole which is just the best with crusty bread and a dollop of creme fraiche!
