Good veggie recipes for pre-schoolers?

We are holidaying with some veggie kids next week, and I was after some inspiration as to nutritious veggie meals that don't involve quorn - any suggestions?

What kind of preparation time are you looking for?

Pizzas are easy to make if you buy the base or use something like pitta breads, then you can control what goes on the pizza (peppers, mushrooms, sweetcorn and onion is a good one).

Stuffed Peppers/Mushrooms? Can stuff with just about anything, but rice is good.

Kebabs are a fun one - Bamboo skewers with courgette, peppers, mushrooms and Halloumi cheese. Can be BBQed or grilled.

Um, am I close?

Simpler things, well, pasta is always a good one :)
I do pasta and make the sauce: Fry onions, Mushrooms, peppers and courgettes, add a tin of chopped tomatoes = instant source.

Thanks Skrg, looking for very quick prep time! Like the idea of the kebab - hopefully they'll sell Halloumi in France. Suspect that DD would turn her nose up at a stuffed pepper or mushroom...

So far I had down:

  • pizzas
  • pasta
  • eggs / beans on toast
  • houmous and pitta bread
  • falafels
  • vegetable and chick pea curry
  • cheese sandwich

It just doesn't seem enough to get us through a week...

To be honest Vegetarian meals are fairly easy to make up once you get used to the idea :)
Why not Quorn, out of interest? I assumed it was for ease of obtaining ingredients, but you've included falafels and houmous, so perhaps not!

Toasties are quick, can be trickier to make without a toastie maker but still possible. Cheese/Cheese and Tomato/Cheese and Baked beans are delicious, but the beans and tomatoes do escape occasionally..

How fussy are they? Could make some sauces and provide things for dipping - Cucumber sticks, carrot sticks, bread sticks, even just bread !

Can disguise repetition of pasta easily by doing different sauces, if you're struggling for different meals.

Frittatas with whatever is nice in the local supermarket/market - mushrooms, courgettes, peppers, peas, sweet potato, squash, red onions, normal potatos etc - add some parmesan/goats cheese/gouda if that would be too strong.

Good hot/warm/cold the next day in a sandwich or for lunch.

Don't think that the French do Quorn, Skryg; I personally love it.

Colditz, baked bean omelettes sound good, and Tiokiko frittatas are a very good idea

French supermarkets sell lots of different kinds of lentils and pulses in jars and cans. Great for curries, chillies and veggie casseroles. Frittatas are quick - add lots of cooked new/Charlotte potatoes to bulk them out a bit. Crusty bread and cheese with salad. Lentil soup with crusty bread.

lentil shepherds pie is always a winner in this house - i'm a veggie but the kids aren't, though they often eat veggie. Just use red or green lentils instead of the meat, and add plenty of veggies, i usually put in carrots, peppers and peas.

bean chilli, depending on how good they are with spicy food?

roasted vegetables with couscous. I often throw in some feta too, or halloumi (cooked in the oven with the veggies).

If you have a barbie, I find a nice big juicy mushroom cooked on the barbie is just as tasty as a burger, you could melt some cheese on top.

Tbh, last time we went to france DD lived on baguette and cheese for the whole week anyway!

DS really likes aubergine & chick pea stew - the trick is to cook it for a long time, put it on at lunch time & serve at tea time

onions
2 aubergines
tin toms
tom puree
pinch of sugar

add tin of chick peas at the end, it blends very well for babies

just posted a veggie chile pie on 'throw together recipes' thread (don't be put off by 'pie'; pastry is a suet crust, so just mix veg suet and flour and water, as for dumplings: dead simple).
