Tomatoes!

I have a glut of them from my dad's allotment. Chutney is out as that's his department. I'll have some of the smaller ones in salads. I'm going to make some soup/pasta sauce with some of the bigger ones. But what else can I do? Anyone got any recipes other than ratatouille?

just made the most divine Gordon Ramsay tomato chutney with my glut

but have been looking at tomato recipes, I am also doing:

  • this tart (made it lots before, its yum )with the Golden Cherry ones
  • tomato and basil soup
  • tomato sauce for freezer minus the garlic
  • slow roasted oven ones with thyme

This Jamie Oliver Chicken, tomato and potato one pan is delicious.

I did oven dried tomatoes once, sliced in half and deseeded, then added a bit of olive oil and left in a very cool oven over night til they dried out. I stored them in sterilised jars in olive oil. Very tasty :)

Cut in half through the middle, pour over a little olive oil and some balsamic, pinch of sugar and plenty seasoning. Tear up lots of basil and put some on each tomato piece.

Roast at 180C for ?40 mins ish till soft and caramlised looking.

Use as they are cold with mozzarella/feta/bread for nice lunch.

Use as they are hot as an accompaniment to fish/chicken/lamb.

Blitz or mash up and use as a pasta sauce (freezes really well and lasts for ages).

Once blitzed also great for a nice and v easy tomato risotto - add to the rice when it's about 3/4 cooked along with more basil and add some cubed buffalo mozzarella at the end (or feta/ricotta are nice too).

I make loads of this whenever there's a cheapo offer on plum/vine tomatoes - about 2 mins of chopping effort for lots of reward.

I use mine to make one pan chicken or to make a roasted tomatoe sauce for meatballs or pasta.

I'm going to try the jamie dish this week though, it sounds lovely.

Or a fresh uncooked tomato pasta dish:

Scald the tomatoes to remove the skins, the
n dice and add to diced mozzarella, crushed garlic, olive oil, salt and basil or parsley.

Add cooked pasta.

Also, I just whizz in a blender and freeze for the winter.

well I made the Jamie recipe and it was lovely although next time I think I'd leave the skins on the potatoes for a more "rustic" look, or maybe use new potatoes? I made a tomato tart which was ok but I didn't exactly follow the recipe and it ended up being a bit sloppy, nice taste though. The rest went into a pasta sauce with other veg which was yum.

Waiting for the next shipment now Grin ... tomato risotto sounds good
