Anyone who likes baking want to test run a digestive biscuit recipe for me?

I have found a recipe for digestive biscuits that I want to bake for an old aunt's birthday as they are one of her favourites. However she is on a sugar restricted diet (including honey and syrup) so I was wondering if they would work with some sort of substitute like banana?

This is the recipe if anyone wants to fiddle around with it to try and make it sugar free.

900g (2lb) Whole Wheat Flour
225g (8oz) Dark Brown Sugar
225g (8oz) Butter
120ml (4floz) Hot Water
1 Egg, lightly beaten
1 tsp Cream of Tartar
1 tsp Baking Soda

Pre-heat oven to 190°C: 375°F: Gas 5.
In a large bowl, combine the dry ingredients.
Rub in butter until mixture looks like breadcrumbs.
Add the egg, with enough water so the dough has a pastry consistency.
Roll the dough on a lightly floured surface into eight to a quarter inch thickness; cut into rounds.
Place on an un-greased baking tray.
Bake for 10-15 minutes or until golden brown, about.
Allow to cool for a few minutes then remove to wire racks.

The problem with substiting sugar in biscuits is the texture depends on it. You could try simply reducing the amount of sugar say by 2oz at a time to see how much it would tolerate. IME you can't use fruit or veg as you might in cakes as they will turn out soggy.

Any Splenda experts out there that could help?

Hmm I wonder if it would work with just 2 or 4 oz of sugar.

It might be worth trying it with Splenda - I thought the whole point of Splenda was that it is a sugar subsitute? Although it could provide less volume/bulk as well.

Not keen on using Splenda to be honest, it doesn't have a good repuation.

Unfortunately, if you're looking to cut out sugar, you don't have many options, and the ones available are usually artificial!

Having said that, what is the reason for your aunt needing to avoid/restrict sugar?

If she can have banana, then she's ok with fruit sugar? You could try that.
