I am making coconut sorbet, need glycerine and have glucose and leaf gelatine. Clearly confused.

not the same afaik. You can get glycerine from the supermarket or chemist.

I really don't want to go out again. This is my second choice recipe as I sent dh to get evaporated milk instead of condensed.

You could try adding a mixture of liquid glucose and a little vegetable oil, if you really can't face going out again. But I make no promises about how it'll turn out...

I need to pour 1tsp of glycerine into the cooled sugar syrup and coconut milk. On the back of the liquid glucose it says it helps control the formation of sugar crystals when making desserts. Oh, I don't know what to do.

If it's not for an immensely important dinner party where the managing director is going to decide the whole shape of your future career, then for that recipe I'd try using glucose syrup instead. But if it is an immensely important dinner party then pop down to Boots and get glycerine.

You will probably find that the finished sorbet is sludgier than it would be if you'd used glycerine.

No not even slightly. You can't make explosives with liquid glucose.

sorrento56 · 23/08/2010 13:36

I went and got glycerine. The kids were aggreeable to going out and I knew it would only annoy me if it went wrong. It is chilling in the freezer now. Thanks for all your help. :)

You can also add it to royal icing so that it doesn't set so hard that it chips bits out of the knife. Not sure of quatities though.
