Anyone got a truly yummy carrot cake recipe?

Planning to make DH one as a birthday cake this week and wondered if anyone has a really good recipe I could use. Not made one before so didn't want to'go in blind' with one that hadn't come recommended.

Go to the Ocado website, search in recipes and find the hummingbird bakery one. I have failed so many times with carrot cakes but this one is delicious. I have also halved the amounts and made it in a loaf tin which is a nice amount, otherwise it is quite big. (they suggest making it in three tins but I have always done it in two.)

this is the frosting recipe, I only make one batch.

When you halved the amount was that enough for 2 tins or just a loaf tin?

Just the loaf tin - I find that the whole cake is a bit much for us all (i just pig out!!). I buy disposable loaf tin type things from Lakeland and it's a lovely size.

Also, it looks like quite a lot of instructions but if you read it through it's easy - wet ingredients mixed, dry ingredients added, nuts and carrots stirred in.

Second that Hummingbird Cake, have made it several times - to the point where I am asked for it if making birthday cakes! It is truly yummy and actually you can decorate it quite easily as the frosting is quite stiff.

Highly recommend using a food mixer if you have one as your arm gets a bit stiff!

The River Cottage Veg Patch handbook has a lovely one too - it uses apple sauce which makes it really moist, and has a glaze rather than icing on top (which for a b'day may not be what you want, but anyway).

When halving the recipe, how many eggs do you use as it calls for 3??

Best one is the Good food receipe - online, omitting the pineapple and adding sultanas. Best ever!

I also convert into individual cupcakes which works a treat and I colour the icing to vary them.

Just made half the recipe with my 2 smallest medium eggs so hopefully it will turn out ok! It's rising fine despite the fact my bicarb and baking powder are nearly a year out of date Blush

Made half the icing but it wasn't enough for me, maybe put too much sugar in and it didnt soak up all the butter so I used more like 50g butter, 100g icing sugar, and 90g cream cheese.

Will report how it turns out - used nutmeg instead of ginger, no nuts, no salt.

I made this yesterday, used 2/3 of the measurements, so 2 eggs, 200g of everything else. That made 24 fairy cakes, half of which were scoffed immediately Grin The rest will go in this weeks lunchboxes.

Just tried making this in a loaf tin. It wasn't done after 25 mins so left it in for another 10 mins or so, kept checking on it. I thought it was ok after that so took it out to cool but it collapsed and is still raw in the middle. I've put it back in the oven in the hopes of salvaging it, but can anyone tell me how long they cooked it for in a loaf tin?
