Hummous recipies please

Whever I make hummous at home it is horrible, but then I don't have a recipe and sort of make it up as I go along and throw chickpeas, tahni and stuff into the liquidizer and hope for the best.

Does anyone have a nice recipe for hummous please?

... and don't tell me it is cheap enough to buy from the shops. I live in quite a rural place, and this is about availability rather than price.

I have never managed to make it as nice as the stuff you buy. I have used this delia recipe and it is edible and recognisable as houmus though! (humus, hummus, houmous???)

Mine is always yummy although I dont have a specific recipe, I just do it as I go along.
I use chickpeas, tinned or cooked dried, garlic (usually one clove to a tin) cumin, olive oil and the most important thing is tahini ( I use the light one) blend it all together in the food processor with lemon juice and salt and pepper. Keep tasting and if its a bit stiff add a drop of water.

I use this one byJill Dupleix without the cumin.
After experimenting with loads of different ones I think this works.

I have also made some really strong ones using raw garlic.
I prefer to put it in the oven first and roast it to make it mild and sweet, then you can add loads. without it being harsh and strangely hot.

Mostly though my worst ones were made by not adding water.
I tend to use less oil than water.

I use this one but I use less garlic and more red peppers.
morag's suggestion of roasting the garlic sounds a good idea.
