friends for dinner - need menu help

We have friends coming for dinner on Sat, she is veggie but eats fish. I am a keen cook and want to do something fairly special as I have the rest of the week off work so plenty of time to shop/cook. I'm thinking of doing twice-baked souffles as a starter but having trouble with main course - any suggestions gratefully received!

How about a baked seabass or something like that for main? Or a fish pie - you could fancy it up a bit?

If you don't mind splashing a bit of cash, shellfish can be pretty spectacular if you have access to a decent supply. Maybe a fruits de mer platter with a homemade tartare sauce and homemade crusty bread? Or a really good all singing/dancing bouillabaise with aioli etc?

I think if you are doing a cheesy rich starter then fish is a good option for main. Do you have pudding sorted?

Currently thinking panna cotta for pudding but open to suggestion! Fish for main course is definitely a good idea, but I think shellfish is probably out as it's August so a lot isn't in season/available at our fishmongers.

Starter: Cheese souffle and rocket salad

Main: Grilled stuffed rainbow trout (stuffed with very chunky lemony pesto and pinenuts) with steamed stem broccoli and new potatoes

Pudding: Caramelised oranges ( vanilla sugar, lemon juice and zest of an orange, brandy and peeled orange segments caramelised in a pan) with ice cream or creme fraiche

That's what I'd like Grin

How about this? You can use sea bass instead of John Dory if you can't get it

Panna cotta sounds yum I have a lovely Nigel Slater recipe for a rosewater and yoghurt one. Or maybe a melon sorbet as a cleanser? Then have some tiny really rich choc with coffee...

Thanks for help everyone. I have decided on:

twice-baked cheese souffle with watercress salad
monkfish with lightly curried mussels (similar to taffetacatski's suggestion)
panna cotta with poached peaches

Wish me luck!
