I need help with lunches and main meals

I need ideas for lunches that can be frozen if there is such a thing - for example I could make and freeze a chicken or cheese sandwich, but it would be very plain - any better ideas?
I also need some ideas for main meals which are quick and easy and can be vegetarian/meat if possible. I seem to have a complete brain freeze and we eat pasta every night. I have a load of chilli in the freezer and mum is making me a curry - what else is there?

just to say in advance we are a really fussy family so if I make up a load of excuses as to why we can't eat what you've suggested, or don't sound too keen, don't take it personally ;)

In my freezer I enjoy having a selection of these things:

Generic tomato pasta sauce (can blend veggies in) - sometimes with bacon added

bolognase sauce

honey and mustard chicken

spanish chicken (to have with cous cous)

mashed potato

fish pies

shepherds pie

lasagne

Obviously, don't have all these things in there at the mo, but esp like having a few boxes of sauces for pasta/rice that have the meat included in so you literally just have to microwave.

Lunches - I struggle to make them interesting too !!

I freeze risottos, paellas,shepherds pie and curries for main meals (also make veggie versions).Also quiches are easy and suitable for lunches.

Any casserole can be frozen.

ANy more ideas/ideas for lunches? Quiche..not that keen - would prefer somewthing sandwichey but I love loads of salad so obv can't freeze it

Risottos are good. Pizza dough: freeze in balls and keep a supply of tomato sauce in the freezer as well.

I do,freeze it quickly once you have cooked it and make sure you cover it quickly too. Make sure it is piping hot when you reheat and eat it when hot.

Frozen salmon filets. You can make and freeze selection of roasted med veg to serve with the salmon or other fish.

Curries are good for veggies and you can adapt recipes to suit your taste, the veg you like. They freeze well.

Stealth - you can absolutely freeze cheese/chicken/ham/beef/corned beef sandwiches. I'm one of four kids and my father would make up a week's worth of breadrolls for our lunches and then a huge chocolate cake/biscuits (unusal for a man of his vintage but he loves to cook). These would all get wrapped in clingfilm and put in the freezer. On our way out the door in the morning we would grab a roll and piece of cake from the freezer, plus whatever fruit was going in the fruitbowl, throw it in our lunchbox lunch was done. By the time lunch came around, everything would be defrosted and would be fresh. (Australia - so v hot climate... before the days when schools had fridges for kids to put lunchboxes in...)

as an add on to this - he used to throw some salad on the rolls too, except for tomato as that would go soggy. But cucumber, avocado, lettuce, onion etc, all worked.

as in it froze OK?? I'm happy to freeze the meat or cheese, I just wonder what else I could put in
