Giant courgette recipies please?

Also, anyone know why they are picked before they get too big?

I think courgettes are called marrows when they get very big. Try googling marrow recipes. Only recipe I've tried is stuffed marrow but now pick them before they get that big. Marrows are just not as tasty or sweet as courgettes.

I do have a lovely courgette loaf recipe - like carrot cake it works surprisingly well. Wouldn't try it with marrows though!

they lose flavour and are much more watery when big ( marrows ). all is not lost though, you can get them back to a courgette like state, with a more concentrated flavour and less watery by treating as an aubergine, ie. cut into chunks, discarding seedy bit in middle as you would a cucumber,salt thoroughly, leave somewhere to drain for an hour, squeeze excess liquid out using teatowel, then roast tossed in olive oil in a low to medium oven for 45mins - 1 hour to dry them out further. then you can use as you would a courgette.

my fave courgette recipes are courgette, dill and creme fraiche pasta, with chilli and garlic as a pasta sauce, with feta and dill in fritters, or in good ole ratatouille or roasted Med veg with lots of slow roasted garlic.

arseymum did Jamie's Courgette Carbonara delicious last night to use up one very large courgette... Only seven to go (courgette fritters are a possibility, but sound quite complicated!)

Otherwise, this week I'll be making an earlier than usual batch of courgette soup for the freezer.....

we have 101 courgettes at the moment..

well 2kg picked yesturday and i reckon at least another 1.5kg ready by tomo.

last night we had prawn and courgette pasta which was divine

we are having courgette risotto tonight

and i plan to make choc courgette cake

but i too need some more ideas please

this soup came out surprisingly nice, I think I upped the herb and cheese quota slightly, but I made a vat of it from my glut of courgettes and froze last year ...

My trusty "Food from your Garden" bible does say that you can store them hanging in nets in an airy frost free place for several weeks... Not actually tried it.

Courgette Fritters???

I love courgette soup when they get too big to be delicious just sauteed - I make a super fast one: just chopped courgette and some garlic cooked for perhaps five or ten mins in stock, then blitzed with some creme fraiche, seasoning, and mint or parsley. Very virtuous and very very easy! And freezable.

If they get to marrow status, chutney.

Courgette soup: 1lb courgettes - 1 onion - 1 pint stock (chicken or vegetable). cook, liquidise and add pepper/salt to taste. Surprisingly good served hot or cold.

just to add that choc courgett cake made a HUGE amount of mixture

perhaps half or even third it

and when in fairy cake cases they bake perfectly in 20 mins and taste really really good

I've got a good recipe at home for dhal with marrow, will try and post it later. Otherwise, our courgette glut is just being used at every meal - in stirfries, flash-fried with garlic and butter as a side dish, chopped into tomato sauces for pasta...plus three huge jars of marrow chutney.

these are meant to be good too.

You can cut the marrow in cubes without the skin and mix it with some salt (1 tea spoon).

Take a few old onions or a leek and chop it finelly. Preheat frying pan and add 1-2 tbsp of oilive oil. Fry onions till golden then add diced sweet pepper; fry for another 5 min and add chopped tomatoes (3-4 medium size). Here you can put the lid on so the tomatoes would let the juices out. Then add marrows draining the juice. Mix everything and cover with the lid. Stir from time to time. Once it is almost ready you can add chopped parsley or dill. Check for the salt.

I also add turmeric when frying onions and peppers (1/2 -1 tsp). And crashed garlic to tomatoes. Garlic gives nice taste.

I've been told by an allotment man to poach large pieces as you would pears and serve with chocolate sauce.

Haven't tried it yet though.

I slice with a vegetable peeler and fry quickly then serve with mustardy and lemony vinagrette.

We have courgette or squash frittatas for lunch very frequently in the summer. We did get a monster courgette, one summer (found it after thinking the plant had actually died!) and it ended up being courgette and chocolate cake and marrow and ginger jam!
