If you don't want to use so much sugar in a recipe what do you replace it with and in what quantities ?

Thanks......just horrified sometimes at the amount of sugar a recipe has (thinking in particular of the hummingbird banana cake I made yesterday - delicious but quite sweet !).

I use half what it says and don't replace it with anything.

I just reduce the sugar to 2/3 or 1/2- you don't need to replace it with anything. I might put some extra sultanas or other dried fruit in- still sweet but with a bit more nutritional value.

I'd also reccomend just reducing it a bit - and if it's really sweet in the first place it should be just right, if you wanted to make up that weight in seeds, fruit or chopped nuts though, that would be yummy!

Thanks for that - I just wondered whether taking away the sugar content would alter the texture or something but that's good to know....It was a lot !.....I have quite a sweet tooth but....

Made the hummingbird pound cake this afternoon - halved the sugar and added some bluberries and it is lovely !

I use raisins or sultanas. Or grated apples, if we've got them.
