What to do with left over roast pork.....

I'm getting desperate as the only thing I know is sweet and sour pork, and DH is getting fed up with that.

Any ideas anyone - plain or very spicy it doesn't matter.

we like it in rolls with either bbq or apple sauce
mince it and make meat balls or patties to go in pitta breads
stir-fry?
it does freeze well so would save you having to cook a roast at a later date

ooh ooh stressedHEmum does a great pork rolls recipe using bbq sauce. it falls apart with forks is delish

here you go:

When I make pulled pork, first of all I roast the pork in the normal way. Then I cut it into thick chunks and put it back in the dish with a couple of chopped onions, some chilli powder, and equal amount of barbecue ketchup and water. (usually about 3/4pint of each for a pork loin joint.) Put it in the oven with the lid on and cooked at a low temperature all afternoon. When the meat is falling apart, shred it between to forks until it is all shredded up. The sauce should just be like a kind of coating on the meat, there shouldn't be any liquidy stuff. Serve it inside rolls with coleslaw and corn on the cobs.

I have done it a few times and its lovely

When it's really falling apart roast pork, recrisp in a hot oven for a few mins and then put in baguette with cucumber/spring onions and hoisin sauce.

mmmm and I don't like meat sandwiches.
