Redcurrants - approx 1 tonne to use (apparently!). What to do with them?

Mum's friend has asked her to ask me to ask "those wonderful women on mumsnet".

She has "a tonne" of redcurrants and wants new ideas for them.

Please help with all your redcurranty recipes

Redcurrant jelly - v good with all meats as well as on toast.

Redcurrant sorbet - a grown-up dessert

Redcurrants go very well in Pavlova - just the right tartness to offset the sweet meringue.

I also make a true sponge base, cover with creme patisserie and cover that with fresh redcurrant and sweeten with icing sugar.

My dcs will eat the very ripe ones straight from the bush. Saves me picking them!

PS I did pick a stone (yes I did weight them on the bathroom scales ) of gooseberries last night - any suggestions for those?

You can freeze them on trays then transfer the frozen fruits into freezer bags.

Yes, I think she freezes a lot but still wants ideas for when she defrosts them!!

Redcurrant and yoghurt ice cream. Use a large tub of Greek yoghurt, a roughly equivalent weight of cooked, pureed redcurrants, and sugar to taste. Put in ice cream maker.

I've just made this but with raspberies and black currents, bet you can use any soft fruit really. It's brilliant on plan on making it throughout the winter with frozen berries.

How about a fruit leather? I've never got round to making one but like the idea. It's just a sweetned seived puree that you dry in a very low oven then scissor in to chewy strips for snacks.

We've been using redcurrants in couscous, as you might pomegranite...but you'd need to eat a lot of tagines!

Lastly I'd always consider if you can turn fruit in to booze! Winemaking might be a bit ambitions but you could steep them in vodka (with some sugar). Bet it would be a lovely seasonal tipple/gift.

For goodness sakes!! Wine!!! Chuck them in a bucket, add 3 bags of sugar and a packet of yeast and bobs ya uncle!

No brainer, if you ask me!
