I am trying to save money, and also weaning my daughter, has anybody got any nice cheap soup recipes?

just bung any old veg in a pan soften for a bit in butter, then bung on some stock simmer for a bit then blitz to smooth.

I like carrot and ginger

Just any old vegetable soup is nice.

1lb of carrots/potato/parsnip + 1 onion
Dice up into 1 pint of water + 1 oxo cube

simmer until veg are soft
Blend until smooth , season and enjoy.

For baby you could make it with less water & Oxo (i.e. a puree) then thin & season it for the adults.

My favourites are leek and potato, carrot, curried parsnip and butternut squash.

One carrot
The stem from some broccoli
One onion
One tin of tomatoes
Handful of frozen peas and corn

Fry the onion in some butter add the veg (apart from the peas and corn) and some water or stock, boil until soft. Blend with a hand held thingy, then add the peas and corn.

You can use whatever left over veg you have in the fridge just don't forget the tomatoes and you can't go wrong.

I made vege and barley soup yesterday.

Cook a couple of handfuls of barley in boiling water in the microwave for about eight minutes.

Meanwhile fry some onion, celery, carrots, leeks and potatoes. Add stock, fresh herbs (I used thyme and rosemary) and the barley and its water. Whack in the oven with a lid and cook for about an hour. Mash with a potato masher a bit to thicken it.

It's really cheap and very tasty, especially if you add loads of black pepper and some chilliflakes (but obviously not for the baby!).

Butternut squash, cut in half, deseed and place on baking tray. Drizzle in olive oil and chopped rosemary (fresh is best but you can use dried).
Roast for 40 mins, puree, then add chicken stock to make it up to your desired consistency - I like mine quite thick. It's delicious.

Fry onions and garlic, add tinned tomatoes, carrots, celery, and a red or yellow pepper all roughly chopped, a tsp of cumin and a tsp of paprika... fry for a bit longer to get a tiny bit of colour on the veg then add stock and simmer for 30 mins. Blend with a stick blender then add a couple of tins of chickpeas or other bean.. Yummy and filling too :-)

packet of split peas, a large onion, chopped, 2 or 3 potatoes peeled and diced, a tablespoon of curry powder, about 3 pints of veg stock. Bring to the boil and simmer for a couple of hours until the peas have turned to mush.

packet green split peas, handful of barley, couple of onions, diced, 3 pints of ham stock and a couple of rashers of bacon, finely chopped or a little box of lardons (optional). Bring to the boil and simmer until done.

1 head of celery, chopped, 1 onion, chopped, a potato, chopped, 1 pint stock, small carton cream, nutmeg, shake of lemon juice. Fry the onion, potato and celery for a few minutes until softened. Add stock and nutmeg. Simmer for about 20 minutes or so, until everything is cooked. Blend with a hand blender, stir in cream, add lemon juice and heat through without boiling. Season to taste.

1 leek, chopped, 1 bunch spinach, chopped, 1 400gm tin butter beans, 2 pints veg stock, garlic, nutmeg, small carton double cream. Soften the leek in oil with garlic. Add stock , spinach and nutmeg. Simmer for about 15 minutes. Add beans and cook another 10 minutes or so. Blend, stir in cream and heat through.

1 onion
1 carrot - grated, put in pan and sweat

1 sweet potato - chopped and added to pan

red lentils - shoved over veg

one can of tomatoes and stock - judge thickness you want

simmer for a while and blend. Add more water if very thick.

Sweet potato makes it velvety. My kids love it! Really quick and easy.
