spinach lasagne - nice or not worth it?

Toying with the idea of making one. Is it nice? - I have never eaten it, but have a glut of spinach.

Any recipes and tips please?

Google delia spinach and ricotta lasagne with pine nuts. On the delia online site. Have made this twice before for veggie and non-veggie friends. It is yummy and freezes very well. A bit of a faff to make but well worth the effort.

Have browsed and googled. All seem to ask to cook the spinach first - is this normal?

Spinach and ricotta lasagne is yummy, even if you're not a veggie!

Just blanche the spinach and then chop it up, if you're not using frozen!

The way that I make spinach lasagne is:

Chop an onion and some garlic and soften in olive oil. Add 2 tins chopped toms, some mixed herbs, salt, pepper and nutmeg. Simmer until thickened a bit and saucy. Chop a BIG bunch of spinach then stir into the tomato mixture and stir about. Cook gently for a couple of minutes until spinach is wilted. Stir through a 200gm tub of philly type cheese or natural cottage cheese, until well mixed and evenly dispersed. Then layer the mixture with a packet of lasagne sheets. Make a pint of cheese sauce (not to thick) and pour over the top. Scatter some grated parmesan over the top and bake at 180 for about 45 minutes or so or until the lasagne is soft and the top browned. It helps with the cooking if you make the lasagne a few hours in advance so that the liquid soaks into the pasta.

This is a big favourite in this house. You can swap the cheese for a big tin of tuna, if you like and add a couple of spoonfuls of lemon juice to the tomato mix.

Yes, it is normal to wilt the spinach before putting it into the lasagne.

Somewhere on this site is a recipe for spinach lasagne with pesto. It is seriously deliciousfor veggies and non-veggies.

I made one somewhere along the lines of the Delia recipe, but only had mozzarella and St Agur and pecorino.

V nice, will do it again when I have veggie friends over.
