Key Lime Pie Cheesecake- so fantastic I had to share

Ingredients

1 3/4 cups graham cracker crumbs
5 tablespoons butter, melted
1 cup plus 1 tablespoon sugar
3 8-ounce packages cream cheese, softened
1 teaspoon vanilla essence
1/2 cup fresh lime juice (about 5 limes)
3 eggs
whipped cream (for dolloping later)

Preheat oven to 350 degrees F.

Make the crust by combining the graham cracker crumbs with the butter and 1 tablespoon sugar in a medium bowl. Stir well enough to coat all of the crumbs with the butter. Press the crumbs onto the bottom and about one half of the way up the sides of an 8-inch springform pan. You don't want the crust to to form all the way up the back of each slice of cheesecake. Bake the crust for 5 minutes, then set it aside until you are ready to fill it.

In a large mixing bowl, combine creamcheese, 1 cup sugar, and vanilla essence. Mix with an electric mixer until smooth.

Add the lime juice and eggs and continue to beat until smooth and creamy.

Pour the filling into the pan.

Bake for 60-70 minutes (if the top of the cheesecake is turning light brown, it's done).

Remove from oven and allow to cool.

When the cheesecake has come to room temperature, put it into the refrigerator.

Once the cheesecake has chilled, remove the pan sides and cut the cheese cake into 8 equal slices (or size of desire).

Serve with a generous dollop of whipped cream on top.

mmmm that sounds good - and easy, which is very good. are digestives similar to graham crackers?

Ooops, I think I need to do some clarification here. I didn't actually realize British recipes and North American ones are a bit different (I'm in Canada).

I'm ashamed to admit that I forgot that in Europe ingredients tend to be measured by weight - shame on me as I was born in Europe!!)

Ok, graham cracker crumbs - I think hard oatmeal cookie crumbs or shortbread crumbs would be the closest. You could probably use digestives but I think they might be too fine. Graham cracker crumbs are a lot coarser.

350 degrees F is around 175 C, I think.

8 North American ounces (for the cream cheese) is about half a pound or 250 grams.

I cup liquid measure is 250 mL.

I recently made cheesecake with butter shortbread instead of graham crackers. Worked fine.

Here's a similar one that can be done with lemon or lime. Make a biscuit base with digestives or gingernuts (maybe dark choc gingernuts) and butter.

Whisk together a can of condensed milk and the same amount of double cream, and add the juice of about 4 limes (2-3 lemons) and the zest of some of them too, if you want. The acid juice will thicken and set the cream and condensed milk mixture - then taste and make sure there's enough lime/lemon in there - add more to taste if neccessary, and dollop onto biscuit base, and chill.

Slice and enjoy.

Graham crackers are just digestive biscuits. Put them in a freezer bag, tie a knot and bash away with a rolling pin or similar till you get crumbs.
