can you freeze risotto

sure this has been asked before but couldn't find it on the search..anyway i made a gorgeous risotto tonight and can't bear to throw leftovers away, will they keep safely in freezer? and if so, what's safest way to reheat?

Rice is well dodgy!

So my Mum always told me. I know the supermarkets do it but I steer well clear of even reheating it I'm afraid.

have it for luch cold with a dash of vinaigrette.. thats what we do and its delish.

Yes -- main thing is to get it cold as quickly as possible (stick saucepan in sink of cold water, then freezer asap) so it's not sitting around at room temp as this is when bacteria can multiply.

Then just make sure it gets piping hot when you reheat. I freeze risotto for the DC all the time and just blast it to thermonuclear in the microwave when reheating.

It's not the reheating of rice that is the problem, it is that bacteria could potentially multiply if it is left at room temperature. And I emphasise "potentially".

So freeze or refrigerate rice and reheat it to your hearts content, as long as you cool it down within an hour of cooking and place in fridge or freezer.

Also, if there is bacteria on rice, heat does not kill it.

It's not a big deal, in all my years of cooking rice (I used to eat leftover rice directly from the pot from the previous night, I have never been ill.

i freeze risotto all the time and have never had a problem with it
it's frozen in standard lidded foil trays, defrosted at room temp then reheated for about 35mins in a moderate oven
