Fasting day recipes inspiration thread

It has occurred to me that it might be good to have a place where we can post recipes of food that we eat on fast days that we can look to for inspiration if we are struggling on a fast day as they tend to get lost on the main thread.

I tend to always eat the same sort of thing so I would definitely love to see what others are eating.

My go to evening meal at the moment is a big pile of frozen mixed veg, mainly carrots, green beans and broccoli, maybe 250g total, and then a heaped teaspoon of miso paste, add water and boil till the veg is cooked. I also add chilli flakes or something like harissa spices to make it more interesting.

I guess I should go first my staples are

Prawn stir fry - around 300 - 350 calories

Heat some frylite spray in a pan.
Add chopped garlic, Birdseye chilli and ginger to taste
Stir these in the pan til they become fragrant
And 150g prawns (only around 92 calories) and chopped veg of your choice. I tend to use various combinations bell peppers, spiralised courgette, mange-tout, sugar snap peas
Add a tablespoonful of soy sauce
Stir fry for about 5 minutes

It is easy and pretty tasty

Prawn and veg soup (about 300 calories)

Spray a pan with frylite spray, add ginger, garlic & chilli
Once fragrant add some boiling water and then add a miso soup sachet, Knorr chicken stock pot and a table spoon of fish sauce
Let that simmer for a couple of minutes
The add green veg (I like sugar snap peas or baby brocoll)
Add prawns after 5 or so minutes and cook til they are pink (Or warm if you are using cooked prawns)
Put in in a bowl and add the juice of a fresh lime

I also make omelettes which are easy to for under 300 calories if you just add veg, Sometimes I use one whole egg and one white so that I can use the calories for one of those proportioned 20g cheddars.

I also snack on full fat cottage cheese (the low fat stuff is disgusting) which I find really filling for the calories and it has a creamy taste which makes me think I am eating something proper.

Following!

I'm a big fan of a fishcake on a FD. The Tesco Thai prawn are great and half a pack of stir fry veg bulks it out for a really satisfying c.350 cal dinner.

I also make a chickpea curry with diced courgette, pepper, onion, spinach, a spoonful of curry paste and a tin of tomatoes. A huge bowl comes in c.250 cals.

Ella Pear's fast day Dahl is really nice - again, low calorie for big portions.

Clearing out my freezer and found something I'd forgotten about.

Youngs do individual wrapped frozen cold fillets Which are about 70 calories per tiny fillet. You can have 2 baked with lemon and even a small amount of butter with veg for a low calorie meal which feels like a proper dinner.

Seabass dry fried on a nonstick pan til crispy skinned, a sprinkle of cayenne and lemon juice
with spinach / general green veg

A huge amount mushrooms fried for ages in the smallest bit of butter, lots of salt and pepper.

boiled eggs. Filling and simple and cheap.

small jacket potato (weighed) with the insides scraped out and mashed with weighed out butter and salt and pepper.

roasted courgette “fries” - I don’t use oil, just chop them into matchsticks and season before putting in the oven.
