do I still have to pay a fee to eBay? (I don't mean the listing fee). What is the advantage of being paid in cash? Only not paying a Paypal fee?

You will still pay the 10% final value fee, but only on the winning bid amount, not also the postage amount. The only other advantage is not paying the pay pal fee like you say.

ah ok . As it was a lot of money....£205 (not inc the postage..which obv he didn't pay)...so they will take 10% off that?

the advantage is you won't be scammed by a buyer claiming not to have received - you must never take paypal for a collected item. You will pay 10% final value fees on the £205 but obvs no paypal fees which are separate and deducted at source.

Assuming you're going to pay the 10% to ebay, you need to look at the list of sold items, find the pull-down menu More actions, and select one of the options, I think it's "paid", to conclude the transaction.

If you don't do this, I think it leads to the ebay system recording that the buyer has not paid which wouldn't be fair on him/her. And it would be likely to come back and bite you on the bum.

a dispute against the buyer doesn't automatically get opened unless you have got it set up to do so. So if you don't mark it as paid it doesn't make any impact.
