Husband type 2 diagnosis.

Hello, my husband has recently been diagnosed with type 2 diabetes. His blood pressure is also fairly high. Since the high blood pressure he's been a little more mindful of healthy eating but it seems now he is really going to be serious about it.
He has a few extra pounds but isn't very overweight. He is however a bit of an emotional junk food eater.
We have read that low carb/Mediterranean style diets are most suitable but could I have some recommendations of some good cook books/websites please?

There are some on the freshwell site and on the diabetes site, but I tend to just Google whatever it is I want to make along with low carb or keto and pick a recipe from there. There is the low carb londoner I think they are called that I've used recipes from.

I tend to pick one with plenty good reviews. As always, it's the accompaniments that tend to be harder.

When I switched from keto to low carb it was easier. I just make sure that I have brown rice or pasta and just a small portion of those.

I still eat high fat (butter/double cream/full fat yoghurt etc) as I need the calories so will add that into any recipes but obvs you need to do what suits.

I got my hba1c into normal range and will be considered to have reversed my diabetes if still okay in 6 months. That's purely by diet and (not enough) walking. No medication at all.

I wasn't overweight, at top of normal bmi but lost nearly 2. 5 stone and I am now slightly underweight and struggle to put any on now, hence all the butter and cream. However I don't have any other health issues to consider.

Dp doesn't eat anything with sugar or sweeteners and dropped most other carbs (under lipid consultant guidance) he's been in remission for a couple of years and has also sorted his cholesterol levels.

I have type 1, and regular exercise will also help with insulin resistance. It doesn't have to be intense or a long session. Aerobic exercise works best to lower my blood glucose. Walking, cycling, running and swimming are what I like.

My DH was diagnosed 3 years ago and has been in diet controlled remission ever since. He did an initial strict 1000 calories a day to drop 2 stone (from top end BMI to bottom end) and now maintains on a low carb diet with no rice, pasta, potato, bread or flour.
The Caldesi cookbooks were really helpful when we were starting out and include a section by Dr Unwin, the GP who champions the low carb approach.
Our main swaps are rice —> cauliflower rice (frozen single portions ) potato —> sweet potato or other root veg (as mash, fries etc)pasta —> edamame spaghetti, bread —> made from low carb mixture in a bread maker. Meals have bigger portions of protein, lots of veg, good fats from avocado, olive oil,nuts etc.
He also had high cholesterol and triglycerides - all sorted out with diet.
