Best lentil dhal recipe? !!!

Read the inspirational thread re cutting food costs.
Have decided to have red lentil dhal x2 a week .
saw what seemed a really good recipe!! … but now cant find it ??
Anyone see it please? Or can recommend the best tasty dhal ? Thank you .

I love this one. It's makes plenty and I often add fresh cherry tomatoes, green beans and spinach. If you want it to be more substantial and have some spare cash it's lovely with paneer, salmon or chicken pakora as well.

We make a really simple red lentil dal that’s 400g of red lentils, really well washed till the water runs clear, a teaspoon of turmeric powder, a teaspoon of salt and about 800ml of water. Put the lentils, water and salt in a pan, bring to a simmer and skim off the foam, add the turmeric powder and simmer until the lentils break down, stirring more frequently as the lentils cook and thicken so that the don’t stick. You can add more water if you need to or if you want the dal more soupy. While it’s cooking slice an onion and a green chilli for the tarka.

Once the lentils are nearly ready make the tarka…heat a couple of tablespoons of vegetable oil in a pan, add a teaspoon of mustard seeds and a teaspoon of cumin seeds and when the mustard seeds start to pop add the onions and chilli. Fry over a medium heat until the onions are soft and tinged with golden brown.

Pour the sizzling hot onion/oil mixture into the dal once it is cooked. If you want you can season with a bit of garam masala as well. Simple and super tasty. You can add tomatoes to the tarka or other spices to your taste.

I’d also recommend Curries with Bumbi on YouTube for lots of wonderful and more involved dal recipes. She’s fantastic and as a bonus very soothing to watch!

This sweet potato and spinach dhal is my absolute favourite. I batch cook it for a freezer as it makes a really quick tasty lunch when I'm WFH

I made the above from vegan desserts in the week. Gave us six portions, but I added some potato chunks to DH's portion. Didn't have any mustard seeds, but still nice.

Buy an Electric Pressure cooker, they cost from £40, and makes dhal in 11 mins. Couldn't live without mine for lots of foods.

Nisha Katona's Aunty Geetas Garlic Dahl on her Instagram page. It's really simple & delicious.
Boil up a cup of red lentils with 3 cups of water.
Add 1/2 tin of chopped tomatoes & a teaspoon of turmeric.
I add a handful of chopped fresh coriander with stems.
Teaspoon of salt & a teaspoon of sugar & add until it suits your taste.
Cook until soft.
Fry up 2 teaspoons of cumin seeds until golden & add chopped garlic cloves - I like a lot of garlic.
Cook until golden. Add to the lentils & stir.
Garnish with more freshly chopped coriander & freshly sliced chillis.

I use the Gymkhana (posh Indian restaurant in London) recipe that was published in the Times some years ago. Its similar to what @MamaBobo says, but I think there's a bit of chilli in and the tarka is made with butter not oil. I make it in batches for the freezer and often add grated courgettes.

But I think it's up to you which is the 'best' dhal, depending on what you like. I wouldn't want tomatoes or potatoes in my dhal for example. Plus you can decide how soupy or thick you want it.

Only on MN would 11g butter per person- about the amount for one slice of toast- by described as "loads" and "massively unhealthy" 😂

My go to is the one from the veggie desserts site

That's my go to for the base recipe

I then throw in sweet potato, carrots , aubergine and make it a really hearty veggie curry
