Quick cheap meals

We're off on holiday to Cornwall with our 3 y/o next week. Excited and we've tried hard to save so we have enough spends while we're there. We would however like to do some cooking in our Airbnb to keep costs down. Any ideas for quick budget recipes?

when we've done self catering, we've cooked a couple of meals and taken that frozen and put in freezer whilst there. So you could just cook extra portions with every meal now and freeze some to take away.
If you prefer to cook there, I would go with omelettes and spinach

frozen veg curry made with an onion and tomato base

baked potatoes with different fillings like tuna, chicken, cheese

packet noodles for quick and easy snacks/meals

MyBigFatGreekSalad · 25/05/2024 20:44

Jacket potatoes
Stir fry
Chicken pesto pasta
Creamy mushroom pasta
Quiche and salad

We do self catering caravan holidays every year. We get things like hot dogs, pasta with a stir in sauce, microwave meals, tins of soup etc. People probably think it's lazy cooking but I'm on holiday too so don't want to be cooking full meals. We also get the occasional takeaway. Hope you have a nice holiday ☺️

Jacket potatoe and beans / cheese and salad
pasta and sauce with a tin of tuna stirred in and maybe some gratec cheese on top
Macaroni cheese.... could add some bacon or chopped ham
Quiche and salad

Pancakes for breakfast
egg and soldiers for breakfast

Pasta and sauce
Pizza
Lasagne ready meal with salad

Sometimes we cook frozen fish in batter or chicken, and then buy chip shop chips. (Fish from the chip shop is of course nicer than frozen but it is now £££ so chippy tea is not cheap!)

pasta with jar of tomato based sauce and meatballs. Add cheese and garlic bread for bigger appetites.

Potatoes all the way! A big plate of colcannon with a sausage sticking out of it or jacket potatoes with all the favourite fillings!

Make pasties with the kids?

BBQ for the win. Do a lidl run when you are here to stock up and get them to choose nice things as part of the fun. Have a wonderful holiday!

Agree with others that you want simple and quick rather than faffing about on your holiday .

Do you know what cooking facilities you've got ? I ask this as we have gas cooker at home and every single holiday I wreck frozen pizza as I'm just not used to an electric oven . But anyway :

Pizza
Creamy tuna pasta with sweetcorn
Hot dogs
Quiche or cooked chicken pieces with salad and chips
Chilli con-carne out of a tin with microwave rice and nachos
If you are eating out at lunchtime you could just do bread and cheese with some dips, sausage rolls etc

Sardines and tomato slices on toast
Cheese on toast

Fresh pasta, sauce and garlic bread from supermarket. Quick, easy but not the cheapest

Quiche, new potatoes, salad.

Seaside3 · 26/05/2024 12:00

I'd cook a few meals and freeze before, take them in a cool box if you have one. So a curry, some bolognese, soup etc. Then all you have to.domis cook the rice/pasta to go with.
I'd also get a bag of frozen chips, take eggs and beans. The bake at home baguettes are nice for a 'treat sandwich'. Blt, or fish finger sarnie.
Pizza.
Boil some eggs for salads or egg mayo.
Burgers. Even if you get the nicer ones, they're much cheaper than eating out.

Don't forget to treat yourself to a.cirnish pasty and cornish cream tea though!

Leopardboard · 26/05/2024 16:30

Thanks all! Potatoes and pasta is going to feature heavily I feel 😊 which is fine by me! Also big yes to hotdogs 🌭 I think I'll buy some frozen bits too as I didn't mention but it's an 8 hour journey we're splitting over 2 days.

I love the idea of not being too ‘spendy’ as my family say. Lazy, cheap tea: TikTok roast tomato and feta pasta. We add bacon if they is any going spare.

Bbq1 · 26/05/2024 17:09

Wtaf is wrong with the word, spends? It's a word I, my family and most people i know havr used for years.
Have a great holiday, Op. Cornwall is beautiful.

And that's how it's done!

Our go-to cheap, shelf-stable meal is rice and beans. Fry an onion in the bottom of the pan, garlic if you have it. Add tin of mixed pulses, tin of kidney beans (in chilli sauce if you like), tin of toms or jar of passata. Optional add slug of red wine, squeeze of tom puree (esp if tinned toms are a bit watery) more chillies/chilli powder/tabasco whatever. If at home I might add some frozen spinach or peppers for a bit more veg. Simmer for 10-15 mins and serve with rice and (if feeling flash) some wraps on the side. Leftovers are lovely on a jacket spud or toast.

Crikeyalmighty · 26/05/2024 17:56

Sausage and mash - use Idaho packet potato - just add water - very good- I prefer it to the fresh prepared stuff and it's much cheaper-
