Best cheap veggie meals ( from scratch) please.

Trying to get the best nutrition for the lowest cost .
please hit me with ideas..!
id like , if at all possible, the highest protein and lowest carb possible ( as dh avoids carbs where he can )
We eat a lot of
lentil
dhal

spag bol- with quorn mince - if there is a cheaper version using an alternative base id be so keen !

Shepard's pie

we are very bored and wd love inspiration !

we keep lots of dried herbs and spices in the house.

Shakshuka

Bean chilli + avocado + tortilla chips

all sorts of curries

pasta + veg + tahini sauce (tahini, soya sauce, lemon juice, paprika, cayenne pepper)

crispy fried tofu + stir fried veg

veggie sausage and mash plus tasty crispy fried onions and veg

home made pizza

home made falafel/ houmous/ quick pickled veg in a wrap or pitta

home made burgers plus home made chips and home made coleslaw

Brown some Richmond meat-free sausages and make a sausage casserole with a tin of butter beans and loads of veg, slow cooker works well, add dumplings at end maybe.
Do a savoury bean crumble with green side veg
Green Lentil Hotpot
Quinoa Stuffed Peppers
Make the spag bol with mushrooms
Mushroom stroganoff
Omelette and Fritatta as well as shakshuka
jacket potato with homemade baked beans, do him roast butternut squash for less carbs
Welsh Rarebit
Baked Camembert & walnut salad

1 tin of aduki beans.
Drain, take half and mash them, mix in with the non mashed, form as patties to make burgers.

Lemon spaghetti, just that cook some dried spaghetti, add the zest and juice of half a lemon per person. Add a lot of black pepper to finish.

Beans on toast.

Soufflé omelette. Separate eggs and whisk the whites to stiff peaks, fold the yolk in and then fry in a pan, once cooked on the base you can finish it under the grill.

Cheats baba ganoush

1 large aubergine, mayonnaise.

Prich the aubergine all over and bake for 10 mins, leave toi drain in a colander, the liquid that comes out is quite bitter.

Once cool scrape out the cooked aubergine and mix with a good 1 or 2 tablespoons of mayo and mix. Add any spices you like.

Garlic dip, 50/50 mayo and greek style yoghurt, then finely chop a clove of garlic and mix.

Veg and bean chilli (you can use up any veg that you've got and add it to fried onions/garlic. Add tsp of cumin, ground coriander, chilli powder and smoked paprika, fry off for a few min, add two tins tomatoes or passatta and crumbled veg cube...simmer until reduced/thickened, add beans for about 15 min.

Frittata - fried onions, garlic, mixed herbs, peppers, courgette, add peas, some cooked diced potato if you want, then pour beaten egg over the veg. Finish off under the grill with a bit of grated cheese on top (optional) Seve with salad.

Chickpea tagine with tomatoes, onions, carrots, gren beans, apricots, flaked almonds, smoky spices and wholewheat couscous.

Savoury crumble. Baked root veg in mildly spicy tomato sauce, topped with oat and nut spiced crust.

Veggie chilli is lovely - no need for quorn - just kidney beans or rose cocoa beans or black turtle beans with tomatoes, onions, peppers, smoky chilli and paprika, served with brown rice. You can add fresh guacamole or sour cream if you want but not necessary if you are keeping costs down.

Wholegrain carbs such as brown rice or wholewheat couscous are good as they combine with other ingredients, especially nuts or pulses, to create a perfect protein, so your DH shouldn't avoid them entirely.

Carrot and butternut squash soup with red lentils - always a winner, filling and freezes well.

Med veg tray bake ( pots carrot onion courgette and pepper with olive oil and herbs of your choice) with or without rice

If you have a Lidl near you, their Frozen Italian Veg makes a lovely Lasagne made with your own Tomato and Bechamel Sauces or just buy the Jars.

I really like this recipe for bolegnese. I use vegetable stock rather than wine. It's an Instant Pot recipe but you can do it on the hob too, either extend the cooking time or used tinned lentils if doing that.

Have you seen the Bold Beans Recipe Book or website. I don’t actually use their branded beans as seem a bit pricey and I am rural so no local stockists. Supermarket own brand tins work fine but if you are lentil or chickpea fans it’s great. It’s not a veggie only site or book though but the majority are.

I make this sometimes as an alternative to dal - cheap and so easy:

Chinese style vegetable fried rice is great - sub the rice for riced cauliflower - just blitz cauliflower florets in a food processor to make it low carb. Fry up grated/julienned cheap veg like carrots, shredded cabbage, frozen peas bit of garlic and ginger (maybe sesame oil) some soy sauce to finish. Add a rolled up and shredded egg omelette if you want some added protein.

If you eat chickpeas you can sub those for the lentil in a dal to make a quick chickpea curry, add some cheap veg such as frozen leaf spinach or a sabzi/subji as a side dish.

Veggie Shepherd's pie - change it up by adding ras el hanout and tomato puree to make it Morrocan style and use a cauliflower and cheese top ( or sweet potato top if you can take the carbs). Sub lentils and or beans for the mince. black beans or aduki beans work well.

This is good too - Indian Shepherd's Pie and I use a cauliflower, root veg or sweet potato top here rather than white potato and tinned lentils for speed:

Mushroom Bolognese - can work out cheaper than Quorn Mince( just about depending where you buy them)- you could also use minced tofu if it's on offer. You could use spiralised squash or courgette and carrot noodles for the low carber. Leave out the red wine to keep the cost down - I find a splash of red wine vinegar, or a splash of soy sauce or veg stock can replace the wine easily - you just want to get more flavour in there.

There are lots recipes for mushroom mince around online - some add chopped toasted walnuts too - it tastes great , ups the protein but does up the price.

Italian Beans are cheap and easy - sub frozen spinach for the cavolo Nero to keep it cheap and braise an egg on top rather than the mozzarella to keep the costs down

Crustless quiche. Cook any veg you have left over. Put in a cake tin with removable base. Pour over beaten eggs and lots of herbs. Scatter with feta and walnuts and bake in the oven till set.
