Frozen mince

I'm just doing our weekly shop and am planning on making a mince lamb curry. Im trying to keep our weekly bill as cheap as possible (maternity leave) and the frozen mince is half the price of fresh. I can't find out the fat percentage which id normally use as a guide. I've never cooked with frozen mince before. Will it be horrible?

You can fry it before you put it in the curry, and drain it on kitchen paper to remove excess fat - I tend to do this with both fresh and frozen mince, and it does make the end result less fatty.

Good idea, I've never done that with fresh and hate the extra fat from lamb. Texture wise is frozen generally similar?

I have never noticed any difference in texture - I think it will be fine.

I always buy frozen mince. Just get it out first thing in the morning so it has all day to defrost naturally and it will be absolutely fine.

Mind you all my meat comes from our very good village butcher. I know where the meat has come from. I don't know what's in supermarket meat.

I find frozen mince is generally finer than fresh.

Frozen mince tends to be very ground down.
I fry it then pop it in the colander and pour boiling water ( over the sink) over it. Loads of fat comes out.
