Hi, I have 3 vegetarian dc and lunch is the most awkward meal of the day here. No one seems to like the same thing and it drives me bonkers.
I thought a thread for lunch ideas might be beneficial for lots of people who are now having to make lunches every day (mine were on school meals) and finding it hard going.

Mine don't eat eggs either just to make things more difficult 🙄 although they eat them in things like pancakes and cake.

Slow cooker meals, I find this way that’s at least one or two people covered and I can make it on the morning and it’s ready by lunch to eat straight away

I live this recipe at the moment, I prep it and pop in the fridge ready to cook and prep the yum yum sauce ready to drizzle on top pinchofnom.com/recipes/hibachi-chicken-with-yum-yum-sauce/ we have with noddles and it takes less than 10 minutes to cook

If they like pizza do French bread / panini roll ones instead of a traditional base it’s much quicker

Birds eye frozen vegan sausage rolls are nice. 20 mins in the oven.

I was also about to say vegi sausage rolls and beans!

I have similar issue and my vague plan this week is veg sausage rolls and beans, baked spud and cheese, 2 days of soup and sarnie. And one day with boiled or fried eggs. And I plan to get the 10 or 12 year old to make it every day. Good luck!

Today we had ‘burritos’ which my dc x 3 all loved. It was basically tortilla wraps and bowls of fillings which they could serve themselves. The bowls were rice, spicy rice (uncle bens Mexican), sweet corn, grated cheese, lettuce, cucumber and spicy chicken

jacket potatoes and beans are something the oldest can make in the microwave.

or make toast

crackers, cheese slices, spread, bread, hummous, pitta, falafel, wraps, crumpets, muffins

oldest ones can chop cucumber and veg.

they can help themselves to fruit etc too.

I have a very full online shopping basket with lots of different fruits, breads, cheeses, salad, crisps, quorn, things for baking. A big payday shop then just top up with fresh produce for the next 3 weeks. I'm thinking of a panini press that is also is a toastie machine and a waffle maker. I've batch made marinara sauce for pasta and pizza and have a double batch of pizza dough rising and will freeze ready rolled dough.
