Is it possible to get proof that you have logged symptoms with 111 or a doctor? PGL & Travel Insurance related

Bit long so bear with me or if you can't be bothered to read, just skip to the last paragraph.

PGL school trip next year. Need to pay deposit but I'm concerned about what would happen if someone in my household has coronavirus symptoms just before the trip is due to happen. Current govt. guidelines state we would all have to self isolate. So child would miss trip until the person with symptoms gets a test and a result. PGL have said if we provide evidence from track and trace that we have to isolate then we will get the money back. My understanding of it though is that Track & Trace would only get involved if there is a positive test. So if the person with symptoms tests negative then we would have been self isolating for no reason. And PGL don't seem to cover this.

My child is covered by my Nationwide FlexPlus Travel Insurance. So I called them and they said they would be covered by it, if we contacted our GP when the person had symptoms or if we contacted 111 to let them know someone in our household symptoms. As then there would be a record of it to prove that we were self isolating even if it resulted in a negative test.

So is it actually possible to get proof from 111 and/or a GP that you have called and told them you have corona virus symptoms? And how would you go about doing this?

By the way, I have no issue with self isolating and personally I think it's a bad idea booking any holidays at the moment. But my child's school is asking for the deposit for this trip now. If I don't pay it then she won't be able to go. And it's her last year of primary so she really wants to go.

Would a self isolation note be ok?

Thank you. It possibly would, I think. I will have to call them and ask if that is sufficient.
