Food ideas using the things we can get hold of

Just thought it might be helpful for people to make some suggestions of simple but edible things using the basic stuff we might have in our kitchen cupboards or the few things we've been able to get hold of - like what you could do with a tin of beans or tuna and very little else or what people could do with their million packs of plain pasta (I'm now regretting not having any in at all!)

Everyone will probably run out of fresh stuff/bread/cheese before they're readily available again so I thought it would be good to share ideas of what to make with the limited frozen/tinned/dried stuff we might be left wondering what to do with!

Corned beef hash, very filling.

Not a recipe but a good tip : fill ice cube bags with milk and then freeze. Then you've always got milk for a cuppa without defrosting a whole bottle.

Other tips - every time I have leftover veg I chuck it in a tub in the freezer. When I have enough I let it defrost, chop into small bits, fry an onion and chopped bacon (if I have some) and add the veg. Cook until crispy, eat with any sauce you like e.g. ketchup, mustard, brown, mayo.

If greens are going off then shred and freeze in bags. They can be used in stir fry later.

We made sweets out of lemon peel this week (good activity for older children or younger with supervision). Can also use orange peel. www.bbcgoodfood.com/recipes/candied-citrus-peel

If you have tinned butterbeans, tinned tomatoes and dried parsley then this recipe is easy, filling and delicious. You can eat it with bread, potatoes, cheese, salad or green veg, anything really. www.bbcgoodfood.com/recipes/gigantes-plaki

If you have too much lettuce and it's going off Google lettuce soup - tasty and a good way to use it up.

If anyone is struggling please feel free to tag me and ask questions - making meals out of nothing / random stuff is a real passion of mine. If you are on Twitter Jack Munroe has also been helping people out who ask her with suggestions.

To those who are struggling to get a filling component to a meal - I noticed that there was (not to cause a run on it!) loads of sage and onion stuffing mix left. We sometimes eat this instead of potatoes with a meal, e.g. stuffing, mashed veg (literally whatever we have all mashed together, you can add a tin of white beans to this to e.g. chickpeas or butter beans), bisto gravy with a fried onion mixed into it. Like a quick and easy mini roast dinner.

Just got back from Lidl they had fully stocked fridges with all meats, cheese, yoghurt, fruit, veg etc. Tins, pasta, eggs were limited and toilet roll non existent

Woodlands and riverbeds are full of wild garlic at the minute (if you can leave the house). Making lots of pesto, scones, and garlic salt. Young nettles are also popping up which can be used just as you would spinach - don't forget to wear gloves.

If you've got a slow cooker, pearl barley and vegetable casserole. Chuck it in the slow cooker with onion, leek, potato (potato thickens it up a bit) tin of chopped tomatoes, cup of stock.
Can add whatever herbs or spices you like too.
Takes a bit of cooking so I'd say put on early morning so ready to eat for tea. Just keep checking to see what it's like Approx 8 hours?

Spent afternoon blanching and freezing vegetables, during mushrooms and tomatoes and making Sofrito to freeze. Oddly therapeutic.
