Tips on keeping turky breast moist please.

Its only DH and I who will eat the turkey - kids only have a slice but probably won't eat it so I just got a £8 breast with skin on.

I'm worried about it being dry - any ideas on how to prevevnt this please? thanks

Rub it with butter/olive oil?

cook it under tin foil, shiny side in so that it reflects the heat inwards and makes condensation which will keep it moist. if you had a whole turkey, advice would be to cook in upside down under tin foil as above

Could I put mini sausages in with it inside the foil? that would keep it juicy, no?

If you don't eat the skin, wrap the turkey breast in slices of pancetta or streaky bacon. The fat from the bacon will baste it as it cooks. You can add some wine or something to the tin while it cooks, too, for moisture, and use what's left in gravy. The alcohol evaporates off during cooking so will be fine for the kids.

Loads of butter and start cooking it upside down then turn around half way through. Also leave it for a good half hour when you take it out of the oven so that it cools slightly and re-absorbs juices.

Cover with butter, put a bit of water in the bottom of the tray/tin and cover with foil, the water will steam it when its cooking (keeping it moist), remove foil for last 20 minutes so it can brown.

Cook it with breast side facing downwards in the tray so the juices run into the breast then flip it over and brown it off in the last 30 mins.

Make sure you shove the butter underneath the skin and then massage more on top the skin.

Cover in Streaky bacon and throw over a good glug of olive oil.
