read the bit that says "leave to mature for at least 2 weeks"

does this really matter or can i put in mince pies later today????

You could try it. It does smell instantly "done" imo but there must be some reason why you need to leave it to mature........

You might also want to buy some from the store just in case . If you have a Waitrose close by, their Cranberry & Port Mincemeat is delicious and just as nice as home made, tbh.

2 weeks? Most recipes need at least 2 months or longer. I would say that if it only needs 2 weeks to mature it will be absolutely fine. Not as nice as if it had matured, but hey, if it has sugar, spice and alcohol in it you can't realy go wrong

I made Nigella's suet free mincemeat and it didn't say I needed to leave it to mature. It's been sitting for a couple of months in the cupboard and does taste lovely now, but it tasted yummy when it was made as well so it will probably be OK.

its the delia recipe it doesn't mention maturing...but another recipe with same ingredients says 2 weeks.

it smells divine so hopefully will be ok

wonder what happens when it matures???

serves me right for trying to be a domestic goddess. can't believe people are organised enough to make it in october!

hi i made mine about 2 months ago and must admit it tastes better now but i tried some out at the time and it was perfectly nice then too - just has more depth of flavour now, I would just use it anyway

i made my mincemeat from the delia recipe (with a little of my own in there too lol) and i didnt leave it 2 weeks and mine is lovely i made mince pies for work today and they have gone down a storm

I bought my mincemeat in a jar and I didn;t make my pastry either

It is better to make it a few weeks in advance at least imo. I left it too late last year and they didn't taste as nice. I made my mincemeat weeks ago this year and it's much nice now I use the delia recipe.
