What can I cook in advance and freeze??

Was thinking of cooking:
nut roast
gravy
mince pies
braised red cabbage

TODAY and freezing for Friday... Will that work? Can anyone give me some advice both on best way to freeze and how to defrost/reheat?

all will freeze well apart from maybe the red cabbage.
I am doing gravy and mince pies today to freeze and will do red cabbage on wed night to keep in fridge and re heat.

brilliant, thanks ELR. Do you just take your pies out the night before? do you put them back in the oven at all?

Red cabbage is fine in freezer, mine has been in there for a few weeks now! Stuffing, bread sauce, parsnips all in freezer too. Am going to do the roast potatoes tomorrow and pop them in aswell. HTH

How do you thaw your cabbage, Rosie29? I was thinking of taking it out the night before, then putting in an oven dish covered with foil and into the oven about 20 mins before everything else will be ready. Does that sound right?

Betty - I freeze my cabbage too. Defrost at cool room temp overnight then bung in a saucepan to reheat

I also freeze:

cranberry sauce
bread sauce
roast potatoes
lemon & orange carrots
pancetta wrapped chipolatas
stuffing
fried shallots with pancetta and chestnuts (to defrost and mix with cooked sprouts )

Also have

mince pies
white choc & cranberry cookies
dark choc cookies
christmas cupcakes
