Am going to sister's house for lunch and it's a 2 hour drive - can take some kind of chillable container if needed I spose.

I was thinking s salmon but tis a bit dull (though obv traditionally Xmassy).
I SHOULD have some time to do some prep the day before or even on the morning as necessary but would like it to be something in the same vein as smoked salmon (i.e. just plonk on table and serve)
Oh for 8 adults and 5 children. (no vegetarians though I'm not averse to a veggie starter)
TIA

What about melba toast and a selection of pates/ just one pate? Nice and simple but tastes delicious!

By the way I meant home made melba toast - much nicer!

Frozen homemade veg soup and crusty brown bread
can travel with soup defrosting and put in the fridge on arrival

Smoked salmon blinis work really well and are a bit different from just normal s salmon. You can assemble everything there - it only takes a couple of minutes once you've prepared it at home.

Blinis: buy packed of 18 mini ones from waitrose or tesco (do NOT make them, far too much like hard work!)

Salmon top: fine chop the smoked salmon by layering up a load of slices on top of each other, then chop down into long strips and across into tiny cubes. Mix with fine chopped spring onion, lemon zest, pepper and lemon juice. (Hint: chopping it up totally changes the texture and makes the whole thing much more luxurious and 'proper').

Assembly: blob creme fraiche on the blini, top with a teaspoon of the salmon mix. Add a tiny weeny piece of lemon if you have the patience.

And...tada!!!
