My sister is veggie (but eats fish, so isn't really veggie ).

I'd like to cook something that either I make up in advance and just reheat (doesn't matter if it is a bit faffy this way) or just very easy to make! She's said she's happy with a bit of salmon, but I think fish can sometimes go a bit cold in those 5 minutes everyone is pulling crackers etc!

Any ideas/inspiration very much appreciated.

Is it for a starter of the main course?

Smoked salmon terrine, salmon pate. Both are eaten cold so not a problem if busy with crackers.

If you did a piece of salmon with some waytercress sauce and wrapped it in a parcel of puff pastry, you could pop it in teh oven when you get the turkey out to 'rest'. Will keep its heat better than just a piece of fish.

M & S do a lovely salmon en croute, thats what DH will be getting while we have turkey (or leg of lamb, still not decided)

I will be using vegetable oil for the roast spuds/parsnips rather than goose fat or dripping, so he can have some too.

Thank you - salmon en-croute is a good idea. I guess that it isn't too much effort to make it up in the morning.

Same problem here. Thanks for the M&S Salmon en Croute idea - will do that.

Just realised that this means we can't make lovely roast potatoes with goose fat .

Surely a fish eating veggie can manage a little goose fat. It's only his fat, after all, not his actual self!
