right, this is not a joke, i have JUST been asked to provide the Xmas meal and I think its going to have to be venison ad i have no clue!

People don't like turkey - can't have chicken for various reasons, goose too fatty. I was thinking of venison - but my family will only eat meat well done - is there a recipe that will make well cooked venison not taste tough? I was thinking of some kind of fruit stuffing.....

its because of a death in the family so i want to be kind. duck not a bad idea though.

venison really doesn;t need to be tough. you need to order it soon though - could be too late. you need to ask for it boned and barded - which means wrapped in pig fat. I'm going to see if I can find you the recipe I used last year. I can assure you it was gorgeous.

Well, we are doing venison too, for the first time. Hugh whatsitposhknob stall has you drap a haunch in caul fat, but you can also use back fat, or pancetta. And then you roast it. The fat stops it getting too dry, but we are a bit worried about the amount of lard that will be in the tin juices so the gravy may be dodgy.

Our butcher is wrapping ours in back fat for us.

I'm doing Gordon's venison casserole on 30th- recipe at the good food site. I've done it before and it went down really well. Leave it to cook, have a few glasses of wine, serve with mash- nice and easy!

Ohh . Duck's nice, they are also alot cheaper than a goose/turkey ect. A bit fatty though. Phesant's are nice but very small.

it was lovely. no memory of it being lardy. I'm wishing I'd order venison now. decidied to stick to turkey this year, thinking about it I don;t know why coz venison is so good
