Okay Help me with my christmas foodie questions

Right the four of us for xmas then 9 for sit down boxing day. Thinking i will

  1. cook turkey xmas day and then on the night slice the leftovers (cooking 11lb) for serving cold on xmas day
  1. Reheat bread sauce and gravy and stuffing from day before
  1. cook mash from jacket potatoes and do roasties, yorkshire puds and veggies fresh on boxing day
  1. Have prawn cocktail for starter to pad out mealin case we have been greedy with turkey day before?
  1. Christmas cake for pud
  1. How do i make mince pies and freeze - do bake and then freeze then reheat? or freeze unccoked in tray and cook from frozen

do you thik this wll be fine?? anything i have missed out??

Are you having the same meal on both days?
I think I'd struggle to eat two Christmas dinners.

Boxing day for us is usually a more buffet type affair with left over cold cuts, and other nibbles.

Yes, don't do two meals the same.BD must be cold cuts and salads.It's the law.

I do cold meats and salads on Boxing Day. Nice cheese and pickle.

Snacky stuff and sandwiches etc.

Why do you want to do 2 Xmas dinners?

i know I would prefer cold cuts but PIL woul
d like a xmas dinner. I dont mind doint want to make it easy or easier for me

easy mince pies is puffed pastry with mincemeat from a jar. Cut into little circles and pop in oven. Freeze when cooled and defrost at room temp.

can you 'make' (i.e. buy a re jar) some pickles and stuff and go for a trad boxing day buffet?

can always jazz up nigella style with some low impact impressive extras.

If you do want to freeze the pies......cook them as usual then layer them in plastic tubs between layers of greaseproof paper. Defrost overnight and heat through for few minutes in oven before serving (with brandy butter on the side ).
