What can I serve for Boxing Day lunch?

Were having the family round for Boxing day lunch, Was thinking that a buffet would be the easiest thing to do so I can use the turkey leftovr from xmas day but what can I serve with it? Thank you!!!!

Bubble and squeak, coleslaw, salad, cheese crackers, cold meat
Yum, much prefer this to xmas day roast

There's only one thing you serve with left over turkey on boxing day and that's BUBBLE.

Mmmmmmmmmm hungry now!! Thanks! How do you all make your bubble and squeak? I know its potatoes and cabbage/sprouts. Do you just fry it together?

I make Gordon's pork pie. Also can make bubble and squeak patties ahead of time, egg glaze then freeze on a baking tray. Cook in oven from frozen.

Definitely leftovers - lots of cold meats and cheeses, add in some pickles, chutneys, bit of salad, crusty bread...

we are having pil's and sil and family over boxing day (even though dh working he reckons he'll be home around 2pm )

I am doing a huge lasagne, big pot of chilli, some cold meats, salad and jacket spuds, coleslaw etc rolls I'll bake that morning (will kill some time with dd1 when dd2 naps)

Thankfully we are off to my parents xmas day so no cooking for me!

OOOHH pork pie that sounds good! Do you think if I made that the day before xmas eve it would be fine to eat on boxing day? LOL at Hark, bless him!!!

Just looked in my Good Food mag that featured the pork pie, and it cant be frozen, but keeps in the fridge for up to 4 days

rislip - its hilarious - he is out there in sub zero temperatures, hat, gloves, coat and his barbecue tool belt with the special holder for his beer

I'm not sure it's a faithful representation of what it would be like back home for him........

we usually have leftover meat (this year turkey crown and roast beef, and some ham left over from xmas eve) with chips and salad stuff, pickle, salad veg, coleslaw, nice bread etc

Rack of lamb? Rib of beef? Or what about some game pheasant or partridge? Not everyone likes game though, DP doesn't!

I;m having my family on Boxing day. My sister is bringing her left over turkey and stuffing (she will make extra or there will be no left overs), then make Nigella's bang bang turkey, roast a gammon joint, roast spuds, couple of salads or some red cabbage (Delia), cranberry, cheeses and nice biscuits. So basically a cold Christmas dinner! but buffet style.

For dessert am doing a meringue roulade thing, mini sticky toffee puddings and maybe a lemon dessert.

My mum used to do fried potatoes (small boiled ones fried) instead of chips on boxing day. Might have to suggest it to MIL.

Cold meats, salad, cheese, savoury stuff...
