Gluten and dairy free christmas cake

I have a friend who is gluten and dairy free

if i make delia's Xmas cake using gluten free flour and dairy free 'fat' (dairy free 'spread' type stuff) is there any reason why it wouldnt work?

would the cooking times change?

normal plain flour doesnt require baking powder or bicarb, so i assume gluten free flour wouldnt either... or would it?

cookingtimes etc won't be different. But lack of gluten can make a huge difference to the consistency. You can buy xanthum gum in health food shops or on line which helps enormously with the texture.

Organic sunflower spread is really nice to cook with. Different flours give different results.

Fruit cakes normally work well - those with ground almonds the best ime. To make it less crumbly, if you can pick up some Xanthan gum in the Free From section of the supermarket that will help.

No need to adjust cooking times or add bicarb.

Doves Farm plain flour is very good

is there a certain amount if xanthan gum to use, maybe 1tsp / 100g flour or some magic formular like that? (have never used it (or seen it, but then not been looking) before!
