Substitute for sage in sage and onion stuffing?

GoodQueenWenceslaus · 24/12/2025 22:09

I usually make sage and onion stuffing, and was half way through preparing it this evening when I discovered we haven't got any sage. No idea how that happened, I probably only use it at Christmas time - but I suspect DH of chucking it out, possibly with good reason as it was probably fairly ancient.

Does anyone have any suggestions for a substitute? I have a reasonably large collection of other herbs and spices. Or can I rely on everyone being too smashed to notice?

Mixed herbs or tarragon?

Just good old mixed herbs, or any of your choice!! Personally I think sage is too strong for turkey, I only use it with duck or goose, and my stuffing this year has dried oregano and a lot of fresh parsley.

Do you have any fresh parsley? (In a pot or in the garden? ) That would be ok.
Or dried mixed herbs might work -- add little by little just in case they are too pungent.
This stuffing works well with turkey
Granny B's Irish stuffing
Very well seasoned mashed potato (quantity to suit the size of your bird!)
One large finely chopped onion fried in butter until soft and translucent
Fresh parsley if available - large bunch, finely chopped
And/or dried mixed herbs 1tsp, or more, to taste.
(Granny B would also put fresh or dried sage in it but I suspect that's not an option...)

Where do you live? Got plenty.

Also popular plant in grdens- not seen any near you?

Thyme would be fine!

Put a post up on your local Facebook group to see if anybody has any they can spare!

Thyme or marjoram

It won't grow in our garden for some reason, so I suspect neighbours will be in a similar position. I'm in South London.

Thanks everyone - I'll probably give mixed herbs a go.

I'd go thyme and tarragon - not too much of the latter. Or go off piste with something like cardamom and nutmeg?

littleturtledove · 25/12/2025 09:36

Thyme, definitely. If you have any fresh parsley that would be nice too.

Scampuss · 25/12/2025 09:37

Would also use thyme.

PickAChew · 25/12/2025 09:37

Rosemary is delicious with turkey.
