Cooking turkey crown and legs separately?

Half the family like the white meat, half the brown meat. Cooking the whole thing at once seems to really dry out the legs. Does anyone cook them separately? If so do you joint it yourself or buy them separately? thanks

We started cooking separately a few years ago and it’s a game changer. We are able to get extra dark meat this way because we have many dark meat lovers. Most recently I even had the butcher debone the breast. It was so much easier to carve and serve.

we use a big, with a flat rack, roasting tray that just barely fits in the oven.

It costs more to have the butcher prep everything, but it is worth it to me. It’s not just one less thing to deal with, it’s a physically demanding task that requires rigorous cleanup. If you know you are going to be tired from cooking the big dinner anyway, butting this task is an easy choice.

The food channel the other day - I think it was Marcus Waring? he cooked them separately - it actually looked amazing what he did - might be better to actually watch it if you can find it, but that's the recipe

We buy turkey legs separately if we get a crown. They’re so cheap we often have them for tea in the run up to Xmas as well

Jamie Oliver also has a recipe for cooking the legs separately.

I think I saw Brian Turner years ago do a recipie and used the basis ever since. We remove and debone the turkey legs the stuff them each with a different type of stuffing - think they take about an hour to cook and absolutely beautiful

Thanks, I'd never seen turkey legs in the supermarket but I'll have a look for them
