Vegetarian Christmas Dinner Main that can be frozen in advance?

I need a veggie main that will go with all the 'turkey' sides - the red cabbage, the stuffing, the cranberry, sprouts etc. Will do veggie chipolatas.

So Nut Roast seems too similar to stuffing - is it?

Lots of veggie recipes I use are Indian etc and not compatible with the rest of the dinner.

I am doing a suet pud with mushrooms and chestnuts in red wine for another Xmas meal.

Would this freeze once made? Vegan mushroom, chestnut and cranberry tart (I would make it veggie, not vegan, with actual cream cheese and butter)

Could I make this, including baking it as a pie, and freeze? I might add butterbeans to the filling as some protein? Potato & fennel gratin pie | Jamie Oliver recipes

Any other ideas?

Wish I had seen your post yesterday as I would have made the potato and fennel pie as I have just made and frozen a nut roast. I added seeds and apricots to make it slightly different from my sage and leak stuffing

That pie does sound good, doesn't it?

If the filling can be frozen I am thinking the completed pie can be frozen - it's pastry after all.

I always make a Wellington about now and freeze it. Put whatever you like with a mix of textures, in a pasty rectangle and seal and brush with egg.

I'm lazy and just bought the quorn 'joint'. Can cook it from frozen and it's something my DC will eat without complaint.

Nutroast doesn't have to be stuffing-like. The beauty of them is that they can be served with gravy, which doesn't apply to a lot of veggie mains. They look good cooked in a ring mould, with stuffing balls and cranberry sauce in the hole in the middle. Rose Elliott's Yuletide Ring is a favourite in this house, and freezes well, although it does take up space in the freezer if you freeze it cooked.

That looks good too, I already have cheese sauce made and frozen for cauliflower cheese... for some reason super organised something will go wrong 🤣🤣

Veggie haggis wellington freezes brilliantly I have made it quite a few times ahead and it’s much nicer than made fresh. I’m going to make it soon for New Year’s Day dinner

We have a slightly adapted version of Moosewood Cookbooks 'Carrot and Mushroom loaf'. We have the 'full' Christmas dinner but just the veggie loaf with it. Goes well with onion gravy, I don't think lots of the veggie alternatives do. We made it last weekend and cut it into biggish slices and froze them wrapped in foil. (I think this copied recipe from our files is almost correct, but it's very flexible, just stir it up really - it does taste good.)

Carrot and nut roast
Ingredients:
100g onion, finely chopped
450g carrot, grated
225g mushrooms, finely chopped
2 sticks celery, finely chopped
100g fresh breadcrumbs
50g ground almonds
100g chestnuts, finely chopped
30g grated cheese
2 cloves garlic
2 eggs
25g butter
fresh chopped herbs – 2tsp each of oregano, rosemary, thyme, etc
½ tsp salt & ground black pepper
Method:
1.Saute the onions and garlic in the butter. Add the mushrooms and cook to soften them and remove moisture.
2. Add carrot, celery and herbs and cook for about 5 minutes.
3. Add ground almonds and chestnuts and stir well and remove from heat.
4. Mix together the chopped herbs and breadcrumbs.
5. Allow the loaf mix to cool slightly before stirring in half of the grated cheese and breadcrumbs mix, and then the eggs (save the other half of the cheese and breadcrumbs for a topping). Mix well.
6. Place in a silicon, or buttered, 2lb loaf tin. Top with the remaining cheese and breadcrumb mix.
7. Cook in a pre-heated oven (180C/160C fan) for about 60 minutes. Check it about 45 minutes in and if the topping is getting too brown cover with a piece of tin foil. Test it’s cooked with a skewer, which should come out clean.
