Baked goods or snacks to go in small tins

I have got a few cute tins and wanted to put food gifts in them. I don't want to make mince pies (prefer a slightly longer shelf life) and I'm not sure I want to do the US thing of baking 75 varieties of cookies with really expensive and hard to find ingredients!

Pan forte is good for that. I do it every year for certain friends and they give the tin back sometime through the year.

Make in an ordinary rectangular tin and slice into bite sized pieces. Dredge well with icing sugar and pack into your tin.

Gingerbread keeps for ages! I use this recipe but halve it for biscuits as it'll make loads! Always goes down well.

Excellent ideas here! I'll have to hide them all from me/the DCs.
I'm a bit hit and miss with gingerbread, always looking out for the ultimate recipe and a good way to tell if it's done or overdone. Plus the rolling thickness. It's a minefield! They all taste good though so family don't mind.
