Light hearted as I know it's "just a roast dinner" etc but wondering what prep do you do on Christmas eve?

Cooking for 8 adults and 2 kids. I have done it differently every year but haven't found the best way except I'm not doing it all Christmas morning again 😂

Think today I'm gonna peel and par poil the potatoes, rough them and maybe oil them then put them in the fridge. Last year I put all in bowls of cold water etc but just felt I had pans and bowls everywhere.

I prep the sprouts and pop them in a bowl of cold water in the fridge because this is my least favourite job. I also prep the stuffing so it just needs cooking in the oven on the day.

We never do anything Xmas Eve, just have a focused 20 mins before cooking starts and do the rest as one of us goes along. This year down to three of us, so it'll be very easy.

Par boiled the potatoes (and parsnips) and put in the fridge but don't oil them. If you want crispy and not greasy potato's you need to make the fat really hot I'm the pan BEFORE you add them to the pan.
Braised cabbage re heats really well. Root veg done today and put in bowls/tupperware would be my favourite. If you put in clip lock you can stack them in the fridge better than an array pf bowls

Put the roast ready in the pan and totally ready to just pull out tomorrow morning and shove in the oven.
What are you cooking ? Yorkshire puddings batter could be made tonighr, its best rested. Stuffing balls and pig in blankets made and ready to shove in the oven. Gravy could be made today.

I was really lazy and bought the m and s vegetable selection for 6 - brussels, carrot and swede mash, roast potatoes, red cabbage braised, cauliflour cheese and parsnips.

We're having duck for dinner. Last night I dry-brined the ducks with salt, sugar and some random herbs and spices, and got DH to peel all the potatoes and put in cold water to soak.

Tonight, I'll parboil the potatoes and rough them up as you say, peel and parboil the parsnips and perhaps the cauliflower and broccoli.

I'm also making a yule log with my daughter for pudding. We've also got brandy baskets which I'm serving with natural yoghurt, a fancy passionfruit curd and raspberries, so no prep needed for those.

I peel potatoes but don't par boil them, just leave them in salted water. Ditto carrots.

Make stock from giblets. Prep the turkey.

Usually.

This year all topsy turvy as have moved it to elderly parents as they are unwell.
