Can I prep the veg today (wash, cut,etc)

I will be very limited in time tomorrow. Do you think I can cut everything today? Sprouts, parsnips, carrots? Potatoes might go brown so perhaps not.
I would put them in zip bags and store in the fridge. Will this work?

Yes you can.

Potatoes, carrots and parsnips - peel, parboil, put on baking tray, cover in hot oil and seasoning, leave to cool and then refrigerate or freeze.

I do this all the time, my potatoes have been in the freezer for a week.

Not sure about sprouts , we don't have them as nobody is a fan!

Edited to add - when it comes to cooking, just roast as normal in oven.

Means the stuff is pre prepared but still 'fresh' and not reheated.

I'm roasting my potatoes today to heat up in the microwave tomorrow. Been doing it for a few years now.
I just have to NOT pick all the crispy bits today.

Sprouts and carrots - prep and place in bags, squeeze as much air out as you can before sealing.

Potatoes - peel and put in a big pan of water, make sure they're fully covered and they'll be fine.

Parsnips - prep and par-boil today, cool and keep in Tupperware until tomorrow.

I’ve prepped the veg on Christmas Eve for 40 years. I just put it in saucepans of cold water. When my dd2 was young and lived at home, she always helped me and it was a lovely time together.

DH always preps veg on Xmas Eve night while I continue the wrapping marathon.

I peel and cut carrots, potatoes and parsnips and cover them in cold water. I don’t parboil my potatoes so just drain them in the morning toss in flour and put into hot fat to cook.

Yes! I do it every year. Putting them in water tends to stop them going brown. I par boil anything that is going to have a second cook as well - potatoes, broccili (for broccoli cheese) and sproats (we pan fry with pancetta)

I also pre make the yorkshire pudding batter and stuffing balls and pop them in the fridge

I part roasted the potatoes the previous day last year, so they only needed 30 mins on Christmas Day - they tasted better than ever and were beautifully crisp

Of course. My parboiled potatoes for roasties have been in the freezer for days. They're much nicer that way and will be crisper than any other way (it's the initial open freezing drying them that makes them so crispy).

Parsnips also parboiled and frozen before coming in maple syrup. Other veg prepped and ready to go, in fridge.

I peeled 120 sprouts yesterday. Need to slice up the chestnuts and maple glazed bacon to go with them - best bit of Xmas dinner! Husband is peeling spuds as we speak, then onto pig wrapping. Pudding to make this afternoon. Think we’re under control!

We have a large plastic tub that we fill with water, peel everything night before and pop them in. Can’t be arsed with peeling on Xmas day!

I don't parboil anything in advance but I do peel, chop, prepare etc

I par boiled my potatoes last year and then coated in oil and put in the fridge to roast as usual the next day. Worked perfectly and so much less stress.
Im planning on cooking partially my carrots to then reheat tomorrow with butter, sugar and orange zest.
The sprouts will be prepped and put in a pan of cold water ready.
The red cabbage is already cooked and frozen so just needs to slowly thaw on a low heat tomorrow.
I wasn't going to do the parsnips until tomorrow as they tend to curl up and go a bit brown as they float in the pan of water.
The pigs in blankets and the stuffing will be done today ready to cook tomorrow.

Peel sprouts, cauli, potatoes and carrots. Leave them in saucepans of water til you need them
