Parsnips and carrots

How are you cooking your parsnips and carrots this Christmas - either separately or together. I picked up the rainbow Chantenay carrots so would love recommendations for separate recipes if possible. Sorry if this is the wrong place to post - was't sure whether ot post here or the food section, I thought this might ger more responses. In desperate need of inspiration / recipes.

Do you parboil first or chuck them in as they are?

Roasted together, rubbed with a little oil, salt and pepper here.
I like them roasted not fried... tried some ready prepped once from waitrose... they were swimming in oil - deep fried carrots anyone?

I parboil for 5 mins and then roast with honey and mustard.

I'm roasting too but separately to the parsnips. I always parboil because otherwise carrots seem to take approximately a year to cook. I might go for some vaguely Middle Eastern spices too for them but my PILs might consider that a bit racy.

I roast my parsnips. Did have very fancy seasoning to put on them but sadly it arrived broken and all over the box. Won't be having carrots, just sprouts.

Never par boil any root veg or potatoes
make sure there’s room in the roasting tin for everything to have a bit of space so they roast
if the tin is overcrowded they steam and don’t brown

Parsnips: parboil, drain but keep lid on. Take out each piece while steaming (keep lid on rest) and dunk in a 50:50 mix of plain flour/grated parmesan seasoned with salt and pepper, so it's fully coated. Then roast. .
Carrots: bake with a little nutmeg mixed in little bit of olive oil, turn a couple of times.

I cook mine together. Quick parboil, then rub with honey, salt and pepper and roast.

I boil and mash them together as that’s now we’ve always had them

but they are standard packs - rainbow ones would be roasted as too nice to mash

I parboil well already done that.

Never parboil. They roast really quickly. Maybe I slice mine smaller? You need to cut the core out of big parsnips to ensure even cooking. Bit of olive oil, honey, salt and pepper.

Together. Parboil, drizzle with smother in maple syrup and turn a few times (I always prep the night before) Spray with oil and roast for at least 90 minutes.

Parboil parsnips here. Just 2 mins. Then coat with whole grain mustard/maple syrup mix plus salt and pepper. Roast for 50 mins in a hot oven. Carrots - slice in half or quarters if bigger carrots. Add lots of butter to pan, seasoning and 1 or 2 star anise. Cover and cook on low heat until tender. Both are yummy.
