Roasting potatoes with veg

Hi- just wanting to get opinions on roasting potatoes with other veg ( carrots, parsnips, sweet potato etc) in the same tin,

I've done this previously with mixed results,sometimes the veg cook too quickly, and burn and the potatoes are too soft and not crispy,

Just wondering what everyone else is doing?

For what it's worth (because so much depends on personal taste/type of oven/kinds of veg, etc) I cook my potatoes separately in duck fat for Christmas. Other veg doesn't need as long or quite as hot an oven, so I put it in later. I also drizzle honey over my carrots and parsnips but wouldn't want it on my tatties, so another reason to keep them separate.

Only for Christmas though. Much of the year I just shove everything in together. But somehow it MATTERS at Christmas.

I don't think I've ever done this as there's never room! Why would you need to - space in the oven? You could take the meat out to rest, then put the potatoes in?

No, I use a separate tin for veg other than spuds because, as you say, potatoes don't crisp up properly with a carrot snuggled up.

I personally wouldn't roast them all together for the very reason you state. I like to par boil my potatoes first and then douse them in hot fat. The cooking times for each item (in my opinion) would be off. Also, if you're roasting the veg in herbs or honey, I wouldn't want my potatoes to absorb those flavours. Basically, I'd do them seperately even though it's a pain!

Aah ok.. I just assumed everything for roasting would pretty much all need the same kind of time in the oven.. hence chucking everything in the one tray,
Could I just also ask how long everyone roasts their potatoes versus their veg., and do you par boil your veg ?

I parboil parsnips and carrots in with the potatoes but only for about half as long ie chuck them in and bring back to the boil part way through. Then do the vigorous shaking and letting them dry off a little together so that they get some of the potato coating that crisps up so nicely.

Whether they all go in the same roasting tray depends on quantity - each piece needs to be separate not clumped together. If there's room, potatoes around the outside of the tin, parsnips and carrots in the middle. They may not need quite as long cooking though. So usually better to put in a separate tin and maybe put in the oven a bit later or take out sooner.

i don’t put veg in with the potatoes. I roast the spuds for about 40 mins (after enough of a parboil that I can fluff the outsides). Veg I don’t parboil and they get about 20-25 minutes in the oven.

I parboil potatoes in salty water until the tip of a knife just goes into the surface. Quicker with a floury spud like King Edward (by far my favourite for roast potatoes) that for waxy ones (not as good IMO).
Then roast in hot olive oil for about hour.
Parsnips I parboil then roast for about 30-40 mins.
I don't parboil any other veg. Carrots roast in about 30-40 mins from raw, but it does very much depend on the size they've been cut into.

I parboil my potatoes until they are fluffy and then cook them at a higher temperature but for a shorter time, so they go crispy. Veg I don't parboil and cook for longer at a lower temperature.

But that's just me.

This where an Air-fryer really makes life so much easier. Parboil veg and potatoes.roast in the oven then crisp up in the Airfryer.

I use separate tins in the same oven at 200 degrees. Potatoes need 20 min longer so they go in first, in a preheated tin with plenty of fat (olive oil in my case). Afer 20 mins I turn the potatoes over and add a separate tin with carrots and parsnips, not preboiled but glazed in a mix of olive oil and maple sirup, black pepper, touch of salt.

Always potatoes separately. I did do sweet potato and brussels roasted with pancetta for thanksgiving and it worked really well.

I've never thought about it and throw everything all in one baking tin (in different parts), mainly due to lack of oven space (two shelves for turkey breast, salmon, stuffing, pigs in blankets and potatoes. Only 2/6 of my family eat meat, so don't need to worry about cooking veggies in different fats/oils. Potatoes always go in at least 20 mins before anything else.
